So why is the CH3 further up field if it’s near the carbonyl? So wouldn’t that triplet on the H NMR be further down field?

How do you determine organic structure if structure formula is not known ??

When the structural formula is not known you utilize all other spectra to support your argument. The information we get from the molecular formula is the degrees of unsaturation. This information helps us, but the structures can be solved without it. I will agree the process becomes more annoying without it, but still possible.

There are 5 degrees of unsaturation, not 5 double bonds. A ring system accounts for one of the degrees of unsaturation, the rest are due to double bonds.

Hi Katie, C7H7NO is a molecular formula that could have multiple structures. If you send me the spectra (NMR IR, MS) that you have I can look them over and present them as a video on the channel. If not try putting the formula into google and seeing the various structures that come up. I know benzamide is a VERY common organic compound with that formula. If you have aromatic peaks in the HNMR, a carbonyl in the IR and an NH2 in the IR/NMR then it likely could be that.
