The @Kaffeemacher have introduced the method of "coffee waving" to further improve the espresso after brewing with vibration.
They have investigated coffee waving and are still working on it. The current aim is to use vibration to better mix the various small particles in the coffee, such as fat, water and other particles.
Normally, these smaller particles clump together to form larger ones. Vibrating prevents this and keeps the small particles on a level surface.
-This makes the taste sweeter and creates a velvety mouthfeel.
