**Room temperature is around 75-76F/24-25C - after 3 sets SF 3 1/2 - 4 hours or longer fermentation until 80-90% rise. If the room temperature is higher or lower the fermentation time can be shorter or longer**

Sourdough starter/levain ingredients (prepare before going to bed):
40g active starter
40g bread flour
22g water
Dough ingredients:
100g prepared starter
490g bread flour
388g water
120g toasted flaxseeds & quinoa (quinoa - rinse & drain before toasting) - add any seeds you want
5g salt
Seeds for coating - flaxseeds, quinoa, sesame seeds, black sesame seeds & poppy seeds

**실내온도 75-76F/24-25C 3번 펴서 접기한후 3 1/2 - 4시간 거의 2배 늘도록 발효해요. 만약 실내온도가 높거나 낮으면 발효시간이 짧거나 길수 있어요**
천연발효종 식재료 ( 전날 자기전에 준비합니다):
천연발효종 40g
강력분 40g
물 22g
반죽 식재료:
준비한 천연발효종 100g
강력분 490g
물 388g
볶은 아마씨 & 퀴노아 120g (퀴노아는 씻은후 볶으세요) - 원하는 씨앗을 넣으면 됩니다 (식힌후 사용해요)
소금 4g
뿌리는 씨앗 - 아마씨 퀴노아 참깨 검정깨 양귀비씨 (원하시는 씨앗을 뿌리면 됩니다)

seaBlue님 안녕하세요! 맞아요! 스코어링하기전 냉동실에 30-90분정도 넣었다 스코어링하면 모양이 잘나오는거 같아요. 😀😀😀 천연발효종 만드셨나요? 처음 만들어 본 씨앗빵 영상 만든후 저의 가족들이 좋아해서 벌써 몇번 만들었어요!😀😀😀 거의 같은빵 만드는데 여러가지의 방법이 있어요. 하나씩 배우면서 만들다 보면 요령이 생겨서 나에게 제일 알맞는 방법으로 맛있고 예쁜 빵 만드실수 있어요. 😀 언제나 궁금한점 있으면 댓글 남겨 주세요.😀 영상 예쁘고 맛있게 봐주시고 댓글 감사드립니다! Happy baking!😀😀😀❤️❤️❤️

I added a lot of seeds here and worked out well and so delicious!😀 You can reduce the seeds if you want and replace with some other seeds. I toasted the seeds on the stove top - someone suggested wash (maybe dirty?) and drain the seeds before toasting (I tried next when I was making it (this one). If you are going to add chia seeds you don’t have to wash or toast (itself is just good to eat and you don’t want to wash chia seeds. Smells so good when handle the dough and baking. Hi I just make the bread than when finish everything I start put the at the refrigerator but only 6 hours the size triple and now I put at the freezer after that can I bake the bread

If the room temperature is very high the fermentation time can be shorter. Yes after 80-90 minutes, score and bake. If you don’t put the dough in the freezer or less time the baking time would be shorter. I put the dough in the freezer for 80-90 minutes (no longer than 80 minutes) to make it easier to score - this is optional. Many thanks for trying the recipe!😀😀😀😍😍😃🙏 Wish it turns our good! Kyeong님 안녕하세요! 100% 통밀가루로 대체할 경우 물을 조금 더 넣어야 합니다. 통밀가루빵은 강력분빵에 비해 빵이 덜 부드러워요. 통밀가루양을 처음엔 50-100g 정도부터 조금씩 늘리면 좋을거 같아요. 통밀가루나 다른 곡류를 넣어서 레시피 만들어 볼 예정입니다. 영상 봐주시고 댓글 감사합니다!😀😀😀😍😍😍🙏
