Ok y'all. The time has come to pack away the Christmas decorations. I'm not sure why this is so hard for me this year! 😂 But, we get it done. Mostly. Almost. I decided to leave the lights, and little trees with just the lights, and the lights on the stairs. For just a little longer. The winter nights need twinkle! 😄 We also make some slow cooker Southwest Tacos for supper!
Slow Cooker Southwest Tacos recipe
Ingredients:
1-2 pounds boneless chicken
1 onion, sliced
1 1/2 cups salsa
1 packet taco seasoning
1/2 tsp red pepper flakes
1 can beans, pinto or black bean, drained
10oz frozen corn
flour tortillas
Directions:
Spray slow cooker with cooking spray. Add slice onion to the bottom of slow cooker. Place chicken on top of onions. In a small bowl combine the salsa, taco seasoning, red pepper flakes, beans, and corn. Pour mixture over chicken. Cover and cook on low for 7-8 hours, or high for 3-4 hours. Serve on flour tortillas with toppings of your choice!
Buttermilk Biscuits recipe:
2 cups self rising flour
6 tablespoons butter
1 cup of buttermilk, you may need more if the dough is too dry
Mix all ingredients to form dough, adding more buttermilk if needed. Be sure not to overmix the dough or the biscuits won't be as soft and fluffy. Shape into desired size biscuits and place on pan. Bake at 350 for 12-15 minutes.
