Authentic does not automatically mean good. A dish is always better ”unauthentic” when cooked by a good chef. Italian grandmothers will hang me for that comment. But they gotta realise that if food diden’t evolve then they still would be eating Ova Spongia ex Lacte with garum or something 😅

@@sofiab.5633 exactly right, I'd suggest using pancetta instead of bacon as it's closer to guanciale. That being said there is no substitute for guanciale, it's very fatty and got a flavor of it's own

Yesss! I’m not Italian but I do know the authentic carbonara should not contain any cream. The creaminess comes from the half cooked eggs and the Parmesan mix when tossed with the cooked pasta. It’s less heavier compared to the ones than contain cream and has much more of an eggy flavour I prefer! Thanks Lynja!

grandma made it well but isn't it supposed to have guanciale or pancetta but bacon can be used as a substitute although I thought Italians don't use bacon in carbonara
