Spain has many regional variations of black pudding, or blood pudding, but the one from Burgos in northern Spain is reckoned to be the best. Morcilla de Burgos features onion and rice and it is actually delicious. We spent a weekend in Burgos some years ago and I bought an artesanal morcilla. Honestly, it was the best blood pudding I've ever had. Another oddity about the recipe for morcilla de Burgos is that the fat is melted lard: most other blood puddings include small dice of hard back fat, which doesn't melt. Don't be scared to have a go at making your own morcilla de Burgos. You can buy dried pig's blood and hog casings online.
