MUTTON CURRY RECIPE:
Preparation time: 15 minutes
Cooking time: 40 minutes
Serves: 4
Ingredients:
For Marination
800 gms Mutton (cut into medium sized pieces), मटन
2 tbsp Ginger Garlic Paste , अदरक लहसुन का पेस्ट
1 cup Curd , दही
2-3 Green Chillies , हरी मिर्च
1 tbsp Red Chilli Powder , लाल मिर्च पाउडर
½ tsp Asafetida , हींग
1 tsp Cumin Powder , जीरा पाउडर
2 tbsp Coriander Powder , धनिया पाउडर
Salt To Taste , नमक स्वादअनुसार
1 tbsp Ghee , घी
Hand full of Coriander Leaves, धनिया
For Gravy:
2 tbsp Ghee , घी
4-5 tbsp Oil , तेल
1 Black Cardamom , बड़ी इलायची
4-5 Black Pepper , काली मिर्च
2-3 Cloves , लौंग
1 Bay leaf , तेज पता
1 inch Cinnamon , दालचीनी
A pinch of Stone Flower , पत्थर का फूल
5-6 Onion, sliced , प्याज
For Masala
4 tbsp Coriander Seeds , धनिया
1 tsp Cumin Seeds , जीरा
1 Mace , जावित्री
5 Black Cardamom , बड़ी इलायची
2 tbsp Black Pepper , काली मिर्च
4 Cloves , लौंग
5 Green Cardamom , हरी इलायची
1½ inch Cinnamon Stick , दालचीनी
½ tbsp Salt , नमक
2 tbsp Ghee , घी
1 tbsp Prepared Masala , तैयार मसाला
Few Coriander leaves to finish , धनिया
For Garnish
Coriander Leaves , धनिया
Process:
For Marination
● In a large mixing bowl, add mutton, ginger garlic paste, curd, green chilli, red chilli powder,
asafetida, cumin powder, coriander powder, salt to taste, ghee, coriander leaves and mix well
and keep it aside.
For Masala
● In a pan, add coriander seeds, cumin seeds, mace, black pepper, cloves, green cardamom,
cinnamon stick, salt and dry roast them well, cool it down and then grind it into a powder and
keep it aside for later use.
For Gravy
● In a large pot, heat ghee and oil, add black cardamom, black pepper, cloves, bay leaf, cinnamon,
a pinch of stone flower and saute well.
● Add onion and saute till its light golden brown in colour.
● Add marinated mutton into the pot and mix well, add salt to taste and mix well.
● Add the required water and prepare masala into the mutton and mix well.
● Cover it with the lid and cook till 5-6 whistle till the mutton is tender.
● In a pan, add ghee and prepared masala and mix well, now add this mixture into the mutton and
mix well.
● Garnish with coriander sprig and serve hot with rice or roti.

Hi Ranveer...I tried this recipe of yours.My comment might get big but I need to mention.. Actually my father cooks mutton in my home for my daughter and for himself..But he is out of station and my daughter said and I quote it "Dadu agar hote to mein mutton khati,aapko to bnana nahi aata" now being a father I had to do something,so I found my refuge at the one and only Mr Ranveer Brar..I followed this recipe of and it came out super..So all thanks to you Sir..The description of a dish is so real,you put things in such a simple way that even a person who is below average cooking,made an awesome mutton curry.. Actually I just followed the instructions..So a big thanks from my daughter and from me for saving my skin..Thank you and cheers and yes one more thing you are simply awesome

Hello ma'am. Very new to cooking so please excuse my silly questions. While roasting the masala, he gives salt in it. Do we remove the salt after roasting and before grinding the spices?

I have cooked mutton curry with this style. Really got an authentic red curry with delicious, tender and spicy mutton. I was not able to decide whether the mutton is giving more taste or gravy. So much enjoyed it. Thanks Chef!!

Made it for lunch today. Used the instant pot. pressure cooked for 15mins and released pressure after 5 minutes. Tasted absolutely Yum. Thanks Chef Ranveer

I tried your recipe. It was so easy. I made mutton for the first time and my wife(who has eaten at best of the places and loves the mutton made by my mother in law) loved the mutton and tab se ghar me mutton bnane ki jimmedaari meri ho gayi. Been a professional chef myself for 18 years I never watched these cookery shows but hooked to yours for some reason your story telling, recipes, and your connection with ingredients and Pots n pans are marriage made in heaven. Was super delicious. Omg. For the pressure cooking phase I cooked in a pressure cooker for 30 mins (checking half way through and adding more water as required. The black cardamoms are quite strong so I used half the qty.

You inspire people to at least give a try.. your motivating words like its not rocket science, kuch nahi karna hai bas..... The best one is phir aap kahoge RB aapne bataya nahi 🤭😄... Every time I try one of your recipes, I learn something new, like the history of our cuisine or tips like tomatoes do not go in mutton curry,etc. My son is a great fan of yours and every time I'm travelling, he follows your recipes to cook. I wish I could share the picture of the dish I made.

Be careful when adding salt to the mutton, as the masala has salt it it. add enough for just the mutton to absorb, then adjust according to the gravy later after cooker is open

The meat masala recipe has given me enough of RB masala for a couple more dishes…love watching your shows for your insight on our Indian history and culture. Indeed we are diverse, I’m a south indian, and we don’t use a lot of black cardamom or even mace in our gravies, but ever since I’ve begun using these spices, I’m hooked. Today my uncle told me this gravy took him back to his childhood and it was my first time preparing mutton for my family. I couldn’t have received a better compliment and it’s all thanks to you ❤❤❤

Adding dahi instead of tomatoes is the Lakhnavi way. Here tomatoes are added in hardly any of the dishes. My relatives would cancel me if I serve them meat cooked with tomatoes haha

Noted 2 things today 1- shade card concept 2- dry masala ( one added in the end), was fried in ghee before adding to the finished product, l am sure this will change the way we cook, thanks Ranveer

heating the masala is always important, as that releases the essential oils and flavours, and roasting masala in ghee or oil, helps retain the aromas better as the ghee/fat/oil is a carrier medium, and keeps the smell with it. bringing more zaika!
