As a Chef in the U.S. I find this fascinating. I am in the South so there is a huge influence of African cuisine in our food. Weare going to be growing Sorghum on our small farm this growing season, both for the Syrup and also for the grain, and incorporating both in our menu, I love seeing someone where the crop originated from preparing it in a traditional way. Also your brother was right the heat was to hot, however cooking over wood, or as we do charcoal, is an art and sometime it gets away from you 😆. We also enjoy the mixture of maize flour and sorghum flour to make brown ugali. It's nutritional value is known to regulate hypertension and most importantly there is millet flour, in our culture brown ugali is mostly cooked during a festival ceremony or come together.
