I get the jiffy vegetarian corn bread mix and on the side it has a recipe for how to make it vegan using unflavored applesauce. It honestly makes the corn bread so much more moist and delicious and I would highly recommend using applesauce for an egg replacement.

The brownie issue used to happen to me too. You have to use way less oil. Especially if using a watery type of egg. Applesauce seems so be the best way to sub for egg. 1/4 applesauce for every one egg. Regular milk has casein which helps with binding. So for plant milks you should use less bc of more water content. I found that out when substituting almond milk in pudding mix. Search it up and you should find how much to use. I think it’s like half of what the mix recommends

Hi Emily! I like to use cornstarch, a little extra liquid, and baking powder to replace eggs, like 1.5 tbsp corn starch (sometimes more), 1.5 tbsp soy milk and 1 tsp baking power = 1 egg. it works especially well for me in cake mixes, and I bet it would work in cornbread

Did the cornbread really call for 2 cups of milk? I would have expected only about a half cup. In general, I would recommend looking up a video of someone making what you’re trying to make to look at what the batter texture should look like. Then, add your ingredients slowly and in increments checking for texture as you mix; remembering that you can always add more, whereas it’s much harder to take stuff out lol!

When you bake have you used applesauce as a substitute for egg? You can’t really taste the applesauce at the end. If all your baked goods come out wrong it might be your oven and/or maybe try mixing your ingredients more or less. That’s the only thing I can think of.
