I have made tteokbokki once and have had it in a Korean restaurant once and have to admit that, probably since I didn't grow up eating this, it still seems a little strange when eating. I love watching K-dramas for many reasons but one detail I find completely charming and compelling is their constant inclusion of cultural tradition and lifestyle quirks alongside the modern 'big city' storylines-- and the constant presence of obscure National and regional dishes often by name too! Same for Japanese drama shows. I love that so much and hope the producers and writers in the countries around the world always do this as it ignites curiosity and eventual reverence in so many people. Cultural pride and keeping traditions and local vernacular thriving is so important. I remember watching a Japanese show that featured a funny episode about Kinugasa Don and I immediately minimised the screen and hunted down a recipe for this mysterious sounding dish (native to Kyoto I now know). I make Kinugasa Don roughly once a month now. And on it goes... :D This is what is meant by 'soft power' and it is faaaaar more strategically effective than being overt and doing things by force, y'know protesting, censorship and social media bullying and shaming and dreadful Identity Politics pressure groups mangling academia and policing the behaviour and views of strangers through guilt etc. There are other far more effective ways to connect and strengthen pride in so-called minority groups in the West and in situ, in their home countries too. Thank you for showing me ideas for this simple beloved street food and home comfort food dish. Yum! Food is always that first gateway people encounter and it is NEVER to be underestimated as having a critical role in the soft power paradigm. The goal is education and respect-- with the bonus that is happiness, connection with foreign peoples, enjoyment and friendly socialisation. Thanks Helen, that's dinner sorted for tomorrow! Sorry for writing you sooo! much but I just Love your videos and I have bought the dried Anchovies but they aren’t as big as yours maybe just a little smaller and I have bought the fish cake’s (Flat)) from a Asian International store because the Korean store is all the way across town (Booo!) so my question is fish cakes are fish cakes right? Hi laudya1 I am actually working on a simple TteokBokki recipe (also includes a vegan friendly modifications). Make sure to click on the notification bell so I’ll be notified when I upload this recipe. Ok, u just omit the fish cake or replace it with vegan sausage. As for the broth, u can use a tiny bit of YeonDu/연두 (concentrated broth flavor enhancer). OR just skip it (the extra umami flavor won’t be there but u might be ok w it). Omg I love your videos and love your enthusiasm and appreciation of food and your descriptions lol, you always make hungry lol!! @modernpepper can we leave or replace the mirin with anything else? I'm Muslim and don't consume alcohol even if cooked out (can use vinegars etc) so am currently struggling with some Korean and other Asian recipes that use sauces which contain alcohol or shelfishes etc that I can't consume. So any alternatives you could share for mirin and for any other ingredients you use... Either because of dietary requirements (eg halal, kosher, vegan diets etc) or trouble sourcing some specialist ingredients. Thank you!!! ❤️

Mix 1 part fresh lemon juice and 4 part water (add just a tiny bit of sugar/brown sugar or honey to make just slightly sweet) and some salt to balance it out. This lemon and water mixture should not taste ‘delicious’ as it is intended to mimic the cooking wine. You might also enjoy YeonDu’s vegan concentrated flavor enhancer. Hi Helen i made the sweet Rice Cake (Tteokbokki )with the fresh rice noodle when opening the package it feel guyi and very tight to separate is that how it’s suppose to be.I still have some left so next time I will make it hot,but overall it looks good and taste great 👍 Thank You ☺️

Hi Wellington! These fresh rice noodles you used, were they Korean? For the packaged Korean rice cakes that come in vacuumed sealed bags, they first need to be soaked in cold water before cooking, as shown in the video. For this dish, instant ramen noodles are recommended. For a healthier option, you can use sweet-potato-starch noodles. Hi thanks for replying. I have seen a small handful of Rosē style. It’s like a mash up with spaghetti sauce and milk or creme with lots of different add ins. It’s somewhat reminds me of Korean army stew because of all the different components added.

Ok I have a question I have the dried kelp that you order and it is thick and has dried powdery film on it so how do I turn it into a thin kind that I can crumble and add to the upgrade at the end of your video you know with the rice and everything or do I need to go to the store and buy the kelp snack packs?

Hi Larry. Dried sea kelp (called dashima) is for cooking with. The seaweed crumble that I add at the end is called, KIM (roasted seaweed used as a side dish to eat with rice). U can buys these any big supermarkets now, but I would always prefer to buy Korean brands. amzn.to/3LmtYtt Once u open the package, u should consume within a few days, as it will lose its crispness. Also, store them in an airtight container or else it will get soft.

I can't eat super spicy food which makes me wonder about this cuisine. However! I am going to try Korean cooking. Is it okay to only use 1 tbsp of Korean red pepper flakes when others use 3 tbsp?

Hi Chris👋 Of course, you can adjust the amount of spiciness, according to your preference🤗Spiciness and saltiness is so personal and unique to one's palette, in my opinion. Some of my friends who are UBER-SPICY food eaters think my level of spicy preference is just "medium," in their opinion🤪 Ok, if you are not a fan of spicy foods, instead of this recipe, try GungJung Tteokbokki, which is the NON-SPICY version of this spicy rice cakes dish. I received it today. I did like it, but wasn't crazy about the taste of the thicker white end of the cabbage. I guess the more it ferments the better the taste is. I love sour!

They r similar but Koreans make them differently and we also make the flat shaped ones. If u can’t get Korean fish cakes, u can use the Japanese ones as a substitute
