Spiral curry puff is a tasty and favourite Asian snack especially in Malaysia and Singapore. It is a deep-fried crescent shaped pastry filled with a spicy, sweet and savoury potato filling. Because of its popularity, spiral curry puffs are found sold freshly fried at many Malay, Chinese and Indian food stalls and even at trendy cafes.
The skill in this popular teatime snack lies in the making of the skin. Although a little tedious with the multiple steps, the spiral crusts created, add such a delectable crunch that stay crispy even when these spiral curry puffs have cooled down. It certainly make these curry puffs so … so special.
To achieve the spiral effect, roll the WATER and OIL dough into a rectangle and then roll it up like a swiss roll. Binding the two pastry doughs makes a nice spiral-like pattern, hence the name Spiral Curry Puffs. Enjoy!

这个下午茶小吃,制作技术的重点在于它的外皮。虽然制作步骤比较多,最后形成的螺旋脆皮会加上非常爽口的香脆感;甚至冷却了后,这些咖喱角依然会香脆可口!这当然就是这些咖喱角的最大特点。
要得到这种螺旋效果,我们把水皮与油皮擀成长条形,再像瑞士卷一样卷起。把这两种面皮放在一起,形成一种美丽螺旋式的花纹,所以被称为螺旋咖喱角!享用吧!

What cool recipe! It's basically a type of puff pastry, but with a butter-rich dough instead of a block of butter so that the filling doesn't leak through the gaps in the layers. How cool! I can't wait to try this!!!

Tried a couple of recipe for curry puff..sometimes the layers are not that visible after frying why is that so. Do i have to roll it 2 or 3 times to achieved it?

Hi, had tried this receipt. Wonderful. I like spicy favour, i will add 1/2 tsp chill powder for enhance favour for next time. I also had used this puff pasty put in sweet filling. Peanut, sesame, sugar, and red bean paste. All fantastic. Thanks a lot

+Huang Kitchen I did it, it's nice. I still have some that I keep in fridge to snacking tomorrow at my colleague house. in order to make it healthier, I tried to bake it. its crispy and yummy, but the problem is the crust is pretty hard to bite (most of at the part of the seam). do you have any tips to make it softer but still crunchy? thx

+ad1kurniawan If the seam is the matter, why not try to use a fork to press on the edges to seal the seam. That way, it won't be thick at the seam so the crust will not be hard to bite. Hope that helps. Thanks.

+Tan Lianny Not recommended. But you can make the cuffy puffs and put in the freezer. Only fry when you need. Hope this helps. Enjoy!

+linda ang I have not tried to bake them before but I did receive a comment from a viewer saying that she baked and it comes out crispy too. Only thing is its hard at the seam. So i suggest that if u bake then just use a fork to press on the edges to secure the seam. I think 180C should do the job. Thanks for viewing.

+aish glow For the curry puff recipe, I actually add water into meat curry powder to form a paste. I use meat curry powder as I added chicken meat in the filling. This curry powder is readily available in Asian grocery stores. Thanks for viewing. Hope this helps. Enjoy!

+Sam To deep fry the curry puffs you will have to use more cooking oil. Otherwise the spiral will not be visible. Hope this helps to clarify. Thanks for watching.
