I had to pull this up on my tv so I could hear you. Don't hang your probes. Get some grill clips and clip them to the grate. You did one clip. Run the clip probe the other way. That way the wire is running out on the right. I did not catch what pellets did you use? When you were at 246/236 on the probe is par for the course. The only differences in our cooks is 1. I do baby backs. 2. I only use SPG at a 1:1:1 ratio, no other seasonings. 3. I don't wrap and 4. I don't sauce. If I do wrap I put in a little whiskey or bourbon. I do spritz with vinegar/water every hour. Your ribs did look good really good.
