Fantastic !!!!! Liked how you took time to also introduce the stall holders and their background from the past. Your knowledge of Malay food is impressive in that by also making comparisons with Indonesian foods. You break down the nasi lemak to it's simplest form with no frills explaining how the rice and chilly dip is the star of this dish. The extras are just indulgence. Good man !!!! Well explained. I like how you put in your research, investigations, nutrition, opinion and advice to your audience so that they can make an informed decision. (i.e. prices, levels of spiciness, balance of portions etc,etc,etc) Your nasi padang brief shows how vegetables can be very delicious and enjoyable as you had 5 veg dishes and 1 (meat) rendang with plenty of gravy.Thoroughly enjoyed this video. I live in London but have family in Singapore and frequently travel there. Will most definitely check this place out. Thank you so much for what you do !!!!! All the best mate !!!!!

Greg, you're right down my alley. This is how I make and like my nasi lemak. You can see the coconut milk layered between. I dislike all these pretentious twists to simple fare. Same for many other dishes. Thanks Greg for your authentic reviews. Love the way you wallop the food down too 😍

Salute your dedication to come to the stall on 3 separate occasions to feature their dishes Greg! You got it on point with the analysis if the rice, shorter grained rice contains more starch which amplifies the 'lemakness' and the sambal looks like its properly cooked & reduced.

Used to intern at TripleOne Somerset, and I would come down here dabao the nasi padang. Whenever I open the packet of goodness in the office pantry, the aroma just floods the whole room and it will always draw people's attention. Love it and I now miss it a lot. Thank you for reminding me about this place. Time to go back haha!

That fried chicken for Nasi Lemak is the perfect tool for ASMR! Agree with you! Simple nasi lemak like this would taste as delicious, no need for fancy food items. Some of those so-called highly raved with fancy stuff doesn't taste as good. As a Singaporean, I shall go there to try one day! Hope it doesn't form a long Q after this video is out!

So true about the basmati rice part! So many places use longer grain rice which doesn't work as well for Nasi Lemak. It just doesn't absorb the lemakness as well as shorter grains.

When I was working there few years back this is one of the food that I always had. The best food stall there is the grilled saba stall. There’s just too many stall that offer nice food there. The western food also quite nice.

Sat 8.4.22. SIMPLY HEAVEN!!!! The sound of that fresh crunchy cue and ikan bilis/chicken is stupendous. Traditionally cooked by experts. Not looking forward to ready cooked shop bought beef lasagna tonight!!! The lunch ready cooked cottage pie was tasteless too.

I am so glad that this canteen is still around! I used to go there 22 years ago when I attended a school nearby. I cannot remember if I had the nasi padang before. But now I am tempted 😂

What I miss most when eating nasi lemak at stalls in SG is the ikan bills with peanuts as it was customary 10 yrs ago or so. And they began serving nasi lemak with either fried chicken or fried fish. This canteen serves the old school nasi lemak that I grew up with. I'll definitely visit Singtel canteen soon. Thanks Gregory for introducing us to this gem. 🙏

Thanks so much for the recommendation! I have just finished my nasi lemak and am blown away. Can't wait to try the nasi padang in a few minutes. For those interested, the stall is closed tomorrow (Sept 1) for a day.

Greg, thank you for the thorough n thoughtful review of the food here. There are so many elements tt constitute to enjoying a meal. One important one being how it evokes memories of good times associated with e meal itself. I think tts where the basmati rice version may hv failed. But it will probably be the familiar taste for the 'artisinal pursuits' of the younger generation, years from now. But yes, recipes do not endure for decades if not for the legacy of goodness they embody. Keep tt passion going, Greg. Kudos for the great job.

Totally agree with Nasi Lemak deep analysis with particular mention to the rice used. The best rice are still the heavy traditional fluffy ones that can absorb the coconut milk, with the right mixed of ikan and ikan bilis. Also I prefer my sambal to be sweet and tangy with subtle hints of belachan and shrimps (pls I don't want to feel as if I am eating prawn paste).

Being a Malaysian stuck in Sg for the past 2 years (sad) I've been really REALLY craving for some sinful, oily, spicy and rich nasi lemak and Malay dishes (we call it nasi campur). No idea this exists! Thanks Greg, hope this place doesn't get crowded after this video lol

Agree with your take on Nasi Lemak. Simpler is better sometimes. Hard to find stalls that nail the rice and sambal. Also agreed about basmati rice; it just doesn't get infused with that coconut taste very well.

ohh, my go to stall during me tenure there. Had it like 4 days out of 5. Can still remember the taste. Absolutely good recommendation, although I still prefer the rendang over the ayam merah. You will not regret it.

Lol - this reminds me of the time I wandered into what probably was a staff canteen on a lower level at KL airport but no one would serve me! The food looked so much better than upstairs.

This place seems like an absolute gem! As someone who often has no idea what to eat in town, this could soon become my new default option. Will go down later this week and eat too much there... In other news, as a personal recommendation, there is a Japanese fusion mee pok place called Li Yuan Mee Pok which is found all the way in Boon Lay which I would love for you to give a go... I won't colour your opinion of it but I would strongly urge you to try it, Greg...

I think the veg is French beans and not long beans. You should try the Muslim Delights at Tai Seng, the sambal goreng is the best.

Hi Greg, there is excellent food in tanglin halt market and the surrounding area. For example Wei Yi laksa & prawn noodle, best laksa i had in singapore. And it is such a cool old school neighbourhood that will be demolished in a few years. I recommend you check it out. Love your videos!

If not wrong, the family had a stall in a coffee shop along Aliwal Street. I had started eating there in the late 1970s, and 80s. At that time, I found it quite amazing to see patrons arriving in continental cars to eat at the warm and cramp coffee shop. It was very popular then. There were several brothers helping out at stall. I believe one of the brothers is still helping out at the Beach Road stall, while another brother do the cooking, with his wife. At Aliwal Street, they had chicken soup which was given free if one asked for without meat.

You are right. The original coffee shop stall at Aliwal/Pahang St junction was started by the grandmother who came from Padang/Sumatra Indonesia. When she became too old, she passed on the stall to one of her daughters, Leman's mother. Another daughter opened a nasi padang coffee stall at Toa Payoh called Che Rose in 1968. When both Leman's mother and grandmother passed away, Leman's eldest brother moved the original shop to Beach Rd. Che Rose Nasi Padang continues to operate at Toa Payoh and is still going strong to this day.

Why wait till the end,, I mix it as soon as I get it. When I first saw Nasi Lemak I thought meh, then I tried it and understood why people love it. My favorite is at Changi Airport at Penang Culture. How do they charge for Nasi Padang? I always seemed to be charged more than the person in front of me...until I realized I order until I can't see the plate.🤣

Mostly by the ingredient i guess. If you take beef rendang,i think that will be more expensive since it is beef. Usually Nasi Padang average $7-$10 depending on what you choose. Never has i ever paid Nasi Padang more than $10 per packet.

There are different stages when you cook rendang. When the sauce is fully reduced and the color is becoming dark brown to black, thats when we call the dish rendang. But when it is still watery/saucy, the dish is yet to reach the full rendang stage. Then we call it kalio.

Hi Carlos, you’re absolutely correct. That’s what it should be but because there are so many in singapore who are unfamiliar with malay food, so the stages of rendang cooking from thick wetness to completely dry is just referred to as “rendang” by the stallholders for simplicity’s sake. Unfortunate but that’s the reality here in singapore. I think I only know of one business in singapore that sells proper saucy kalio.

@Sithu Kyaw. Fuel/fertilizer for vegetables, food prices have increased tremendously worldwide (2022). So the costs get passed down. The hawkers work very hard, long hours, they can't go away for long holidays so it's reasonable for good quality authentic tasty food. In London (2020), I paid £15.00 (including a glass Chinese tea, service charge, sitting at table on the pavement) for VERY poor tasteless, miserly 3 small prawns, few carrot, beansprout strands fried noodles. Never again!!! My local takeaway is 100 times better/cheaper.

@@p6953 the reason I said the price has been inflated because I studied in Singapore before moving to the UK to study bachelor and PhD. Once I've seen your comment I realised I made correct decision about leaving sg as its citizens are toxic

Sadly I am a Singaporean who never tried this stall because I don't actually think we can dine at canteen. Such a pity cos you actually view it as the top 5 nasi lemak. This video really make me want to rush there to try ASAP.

I don't like French beans, so I look for the slight visual differences in long beans and French beans. I'm quite certain that you ordered French beans, but I might be wrong 😂😂😂

The original nasi lemak comes with nasi lemak, fried egg, a few slices of cucumber, ikan bilis, peanuts n 2 small fried ikan kunning! That's the original nasi lemak! NOT with fried chicken or fried fish fillet or other non basic nasi lemak accompaniments! Nowadays nasi lemak is not so genuine bcos the basic items are exchanged for other items like fried chicken, fried fish fillet, sausages, etc., so as to sell at a higher price resulting in no more an economical meal!!
