I'd love to see people doing more value added stuff. Venison bresaola would have to be delicious, some venison added to otherwise pork based sausages can be a marked improvement on the original. Venison prosciutto (maybe a bit too lean)? Pies using the mince along with some pork backfat!

Dry cured meats also have the advantage of extending the shelf life, which counts for a lot.

I realize that funds need to be generated from the venison. But if the deer need removed, and a buyer can't be readily found, can some of it go towards donations to organizations like domsfoodmission and others in the near term? Are there any tax breaks for this type of donation? I think that Dartmoor Deer Services is doing well with their processing and selling venison products through their meat box deliveries.

It's likely that more people will set up deer box schemes. Freezer space is cheap. I think that's a good solution. / Charlie

@@fieldsportstv I have been talking about deer boxes for over a year with professional stalkers and, because the path of least resistance meant no change, they carried on doing what they are doing and now have a problem. I agree they are a useful solution and developing markets, some local some not, will be key.
