I could also envision him taking King's Landing, albeit briefly, only to be burned by Daenerys' dragon.

In the books Stannis assigned his more loyal knights to take her away from the North and “If I’m dead, seat my daughter on the Iron Throne.” There is a chance that she might burn but NOT by Stannis orders.

They've admitted in commentaries that they just didn't like him. A lot of his best traits in the books are removed or given to other characters ( _he's_ the best-read and most intelligent of the Baratheon brothers in the books, not Renly, for instance) and many of his enemies are made more sympathetic to make him look worse. So this was is a completely logical endpoint of their treatment of him.

There'd be a lot of cut fingers in the kingdoms. And I'm pretty sure not everybody would be as cool about it as Ser Davos. Don't get me wrong, Stannis the Mannis is a great character to watch, but a king cannot be autistic Lawful Neutral during peacetime. People generally don't always hold their duty above all else all the time, and a ruler unable to account for that or show leniency would be painting a huge target on his back, despite his good intentions.

I've heard a lot of people talking about this "Stannis the Mannis" fellow, and from what I understand he's Westeros' version of Dennis the Menace.

They did Stannis dirty in the movies. He was much better in the books.
