This is my easy to make Okra Recipe.

Ingredients :
600 gms Okra
3 tbs Olive Oil
1 Large White Onion
5-8 Cloves of Garlic
1/2 tsp Mixed Spices - Cloves, Cumin Seeds, Coriander Seeds, Cardamom and Tumeric
1 1/2 Tbs Tomato Paste
200 ml Tomato Sauce
Method :
- Wash the Okra and keep it clean
- Top and Tail the Okra, then cut them into bit size chunks
- Slice the Onions
- in the pan add the 3 tbs of Olive Oil and heat it
- Add the onions and sauté until brown, keep stirring to prevent burning
- Peel, wash, crush and slice the garlic
- Add the garlic and keep stirring
- Add the spices : 1/2 tsp of cloves, 1/2 tsp of cumin and coriander seeds powder
1/2 tsp cardamom and tumeric powder
- Add 200 ml of tomato sauce
- Add the 1 1/2 tbs of tomato paste keep stirring the mixture in the pot
- Finally add the sliced Okra and turn it in the pot
- Cover and let it simmer and cook.
- Serve when ready !
- Enjoy.
