鹽焗雞
材料:
冰鮮雞1隻
鹽焗雞粉1包
處理:
1. 斬去雞腳。
2. 去除雞膏及雞肺。
3. 洗淨雞,擎乾水。
4. 鹽焗雞粉倒入大碗中。
5. 加入1茶匙玫瑰露酒。
6. 加入生抽2湯匙。
7. 攪勻。
8. 雞已擎乾水,再用廚紙索乾雞的內外。
9. 放雞入調味醬料中,內外搽勻
10. 醃2小時,最理想4小時。
烹調:
11. 煲滾一鑊水。
12. 放蒸架。
13. 大火蒸雞35分鐘。
14. 蒸了15分鐘後,要加入滾水繼續蒸剩餘的20分鐘。
15. 雞蒸了35分鐘,熄火,不要打開蓋,焗10分鐘。
16. 攤凍,斬雞,上碟。
Steam salted chicken
Ingredients:
Frozen Chicken 1 No.
Spicy bake mix 1 No.
Preparation:
1. Cut chicken feet.
2. Remove fat and lung of chicken.
3. Rinse chicken thoroughly and hang dry.
4. Put spicy bake mix into a big bowl.
5. Add 1 tsp rose liqueur.
6. Add 2 tbsp light soya sauce.
7. Mix well.
8. Chicken has already hung dry. Dry with kitchen towel afterwards.
9. Put chicken into seasonings. Mix well.
10. Season chicken for 2 hours, 4 hours will be better.
11. Boil up a pot of water.
12. Put a steaming rack in wok.
13. Steam the chicken at high flame for 35 minutes.
14. Add hot boiled water into wok after steaming 15 minutes, then steam for the rest of 20 minutes.
15. Chicken has been steamed for 35 minutes, turn off fire, and keep the lid shut for 10 minutes.
16. Cool down the chicken. Cut well. Serve.

0:47 有些燒味店掛出來的白切雞, 有黃色, 有白色, 都好多人選白色, 因為冇咁肥, 在街巿, 三黃雞好多時都係最平, 30幾元一只, 但白色雞反而好多名堂, 土雞, 清遠雞, 胡須雞, 文昌雞, 60至90元一只 5:21 如果用架去蒸, 蒸完後雞汁雞油流晒入鑊中, 好多油, 要洗鑊都麻煩, 我就用不锈鋼碟去蒸就得, 咁雞汁留在碟中, 可以放入雪櫃, 咁好易將固體雞油分離, 剩下的雞汁用來煮飯 雞汁唔會令底部唔熟的, 蒸35-40分鐘點都熟, 6:50 唔使全程大火, 可能係你個鑊太漏熱氣, 我用壓力煲蒸, 但唔加壓, 用細火都可以, 省煤氣錢

我通常洗完雞之後,再用粗鹽刷匀全雞身,再清洗去除異味。
