Filet on the BBQ is a terrible idea. There's not enough fat in the cut to keep it tender. But it's fantastic on a hot griddle; no smoke in the house and no washing dishes either!

As a former member of the potato industry and a lifetime member of the potato growers association, I appreciate your support. And as a member of the north american tomato grower's association I'm required to remind you to serve ketchup with that there meal. Heinz signs the paycheck for half of southern Ontario it seems. Also if you wanna try mycelium those "Quorn" vegetarian "meats" are Fusarium mycelium. I quite enjoy it. I'm happy you gave the fungi a mention, us mycologists are under-appreciated folks. There are dozens of us!

To get the degree your opinions towards fungi don't matter much, but you gotta have a real masochistic streak to make it through the years of schooling and poverty. Time to build some proper storage bins. I've seen farmers that have potato bins twice the size of a regular pallet, single pallet size for onions and twice as large again for carrots. If they were ever snowed in they've live just fine.

You can do it the other way if you own a food processor. That roasted garlic would be heavenly mixed into the potato pancakes. I do that with my dough hook and even the skins almost disappear.

Anyone else watch these cooking/family vijeos and find that your respect for AvE grows? Somehow his one liner and pun game is just as strong with the wife and kids as it is in the shop with us. All while somehow keeping it clean or obscure enough for chickadee & brother bears ears.

Ahhh, from the mouths of babes. AvE laid out the moral case for Veganisim. Chickadee processed the information, compared it to the deliciousness quotant of meat (beef in particular) and decided on the spot that responsibly sourced animal protein was the way to go. She's on her way to being a card carrying PETA member (People Eating Tasty Animals) already.

I grew up an orphan, i spent 13 years of my life in an orphanage and ive always wanted a father figure (im 16) but my foster father is a bit of a ladylike sissy. I'm not proud of how much I've been enjoying these cooking videos. You guys are quite the awesome little family. Once the weather clears I'm going to have to restore my old cast iron griddle that accidentally got left out in a rain storm and ruined... love cooking on a griddle; grossly underrated.

I used to have a local butcher who would save a tenderloin for me at times. Came wrapped in butcher paper! I missed him after he retired -- but recently have seen him greeting at Walmart. It seems he got tired of retirement.

In Ireland, we stored potatoes in straw bedding. Often covered in earth. They keep better than in a cupboard.

Does that actually work? Here I been wasting my sawdust putting it on my sidewalk and I put up an 8 penny nail on a joist and hang the potatoes in their bag there. As long as they're not red potatoes it works very well. I used to visit the country to hike and on my way back I'd buy #100 of potatoes from the farmers every fall and that worked perfectly for any white potato. They had more dirt on them and were in gunny sacks & could last a very long time that way.

True story: bumped into Maynard at a local High School wrestling tournament a few years ago. Like, crashed in the doorway of the coaches meeting. He helps with finances and sometimes does some instruction at his former HS in Michigan.
