Re the no saluting, in the Australian services you are not to salute when out of uniform. I believe this to be the same in the UK. Even servicemen in uniform are not considered in full uniform once the hat is removed. This is why hats are left at the entrance to the mess hall so no saluting is required inside. It is so ingrained that if a serving member enters the mess with a hat on, a bell is rung and the offender has to buy drinks for everyone in the mess. I think they were correct to bow their heads in respect.
