If you like those Strawberry Shortcake ice cream bars, you will love this cake! Yes…it takes a lot of time and effort, BUT it is totally worth it!!
Ingredients for Cake
One white or vanilla cake mix
Bake according to package
One package strawberry gelatin
Ingredients for frosting
One block cream cheese, softened
1.5 cups heavy whipping cream
1 cup powdered sugar
1 tsp vanilla
Ingredients for Crumble
Method
Bake cake according to package, bake and remove from oven, set aside to cool.
Mix the gelatin by Boiling 1 cup of water. Transfer boiling water to heat safe pitcher, add one package strawberry gelatin, stir until dissolved. Add in 1 cup cold water, whisk to combine.
Use a fork to poke holes all over the cake. Pour the gelatin over the cake. Cover with foil and place in refrigerator for at least 4 hours to set.
Frosting
Beat one block of softened cream cheese until creamy, set aside in smaller bowl.
To same mixing bowl, add 1.5 cups heavy whipping cream, 1 cup powdered sugar, and 1 tsp vanilla. Whisk or mix until stiff peaks form (about 5-7 minutes).
Add cream cheese back in with the rest of the frosting and whisk or mix until fully incorporated.
Place in the refrigerator until cake is ready
Crumble Topping
18-20 Golden Oreos
place in a bowl and chop them up to a coarse crumble.
Add 1/4 cup melted butter
1 package of strawberry gelatin, sprinkle powder on top.
Stir to combine
Spread the frosting over sides and top, spoon crumble over the cake.
Serve and Enjoy!
