First of all this is not really the French version because of the whipped cream, secondly if you wanna use whipped cream use a stabilizer in an hour that cream will separate and you’ll end up with watery strawberry filling. Make pastry cream is so easy to make and much more stable

Place the sheet of pastry on a lined baking tray and dust with icing sugar. Place another sheet of greaseproof paper on top of the pastry and a heavy baking tray on top of the paper so that the pastry bakes flat. Bake at 200C/180cfan for 20-25 minutes, or until golden-brown. Remove from the oven and set aside to cool.

Isn’t mille-feuille just the name of the technique? Because you use the same dough for, for example, apple turnover.
