When topped with an oat mixture, the crisp texture makes this strawberry rhubarb crumble the perfect dessert for spring!

FOR THE SYRUP
- 1 cup sugar
- 2 tablespoons corn starch
- 1 cup water
- 1 teaspoon vanilla
In a saucepan, mix the cornstarch and sugar. Add water and cook over medium-high heat until thickened. Once thickened, remove from heat and add vanilla. (Adding vanilla over the heat will diminish the vanilla flavor.) Set aside.
FOR THE CRUMBLE
- 1 cup flour
- 3/4 cup old fashioned oats
- 1 cup brown sugar
- 1/2 cup chilled butter, cut in small pieces
- 1 teaspoon cinnamon
- 4 cups finely chopped rhubarb
- 1 cup fresh strawberries, hulled and chopped
Mix all dry ingredients then add butter. Using a pastry cutter, cut butter into mixture until coarse crumbs form and no large bits of butter are left. Pour half of the crumble into a greased 9×9 pan. Press lightly into the pan. Then pour rhubarb and strawberries on top of crumble crust. Spread evenly and pour prepared syrup over the rhubarb and strawberries. Finish by adding the rest of the crumbs evenly over the top. Place in a preheated 350-degree oven for 50-60 minutes. The edges will be bubbling and the crumble will become firm. Let cool for 30 minutes and serve warm or at room temperature.

I have a huge rhubarb patch and for years didn't know what to do with it. I've been using it this year and this recipe is going to be our dessert tonight - thank you! I haven't seen one like this for strawberry rhubarb crumble.

Looks like I'll be getting some strawberries 2morrow, and cutting down my rhubarb. I have never seen a crisp made with that sauce and it looks yummy. You really need to have a show or cookbook because your videos and site are wonderful. Thanks, marie from Canada

Glad to see you back with your delicious treats. Thank-you. I made Rhubarb and Custard the other day, and it was lovely. I think I might have put too much custard powder as when I put it in the fridge the next day it was like cement. You could have cemented it with bricks lol. The Rhubarb was delicious though. I didn't know that it takes not long to cook. It's got a lovely taste to it. Hope your keeping well. 🌝

Looks great! But I'd rather the focus be more on the rhubarb not so much the strawberries, but still looks delicious :)

This is not a crumble! Looks delicious whatever it is but not what we in England would ever call a crumble. Not remotely traditional. Crumble is also always served hot with custard. I was shocked at this masquerading as a crumble.

Haha in the U.S. Midwest we have many dessert that have been worked and made to fit over the generations of home bakers! This definitely is not a European crumble but a U.S. one 😊
