The first sandwich is called lampredotto. It's the 5th stomach of the cow, which gets boiled and seasoned and served as sandwich or standalone dish with beans and tomato sauce

It's cow stomach. Doesn't look good but the taste is very delicate and the texture very cloudy.

It's called Lampredotto in Italy, it's one of the stomachs of the cow - one of the least used in other countries too. It's a delicacy of Florence, where it's thoroughly cleaned and slow-cooked in a vegetable broth. It might not be a looker but it's absolutely delicious
