I make CRÈME Brûlée every Christmas Eve and instead of white sugar, I use granulated brown sugar. I think the brown sugar has a better carmelized flavor. And to me, it looks better when it’s torched than the white granulated sugar.

I enjoy imagining your dinner parties after seeing the lovely place settings you create. My dinner parties include little grandchildren so there are not many fineries used at our holiday table, and we most often have self-serve dishes from the kitchen counter to keep it simple. I’ve been doing that now for years and you can be creative with them. I add cream cheese or sour cream sometimes. One question on your silverware placement; I was taught the knife, soup spoon, and next the dessert spoon. I like the look of your placement so did your English Buttler friend give you that idea? Some fabulous cooking and entertaining ideas you've got going on there, Kevin. You're always so inspirational. When I make creme brulee, especially at Christmas, I place a few candy canes in my mini osterizer (similar to a magic bullet), chop them up finely and use those as the topping. Oooh, we usually have a beef tenderloin for Christmas dinner, but I am not a huge fan of that. I wonder if I could convince the family to have short ribs, which I find much more delcious! I had creme brulee a week ago on my birthday, at my favorite five star restaurant in the big city. Am I a lucky girl, or what? The waiter brought it with a lighted birthday candel in it. One of my top favorite deserts. The burnt caramelized sugar on top reminds me of when rain freezes on top of deep snow and you have to break it to get through. I love the fresh evergreens decorating the tablescape. Okay, my mom used to cut evergreens from the yard and she would tuck here and there under platters and trays of food. When I watch your program I am often reminded of good memories of times gone by. All of the beautiful things in life. Anyway, fun to see Avery, and cats worked their way into the video. So cute.
