Really soft and fluffy Genoise recipe (with Air fryer)
Just follow the process
and you will be able to make a really nice cake!
You can slice it and use it as a cake sheet.
Or,,, It's really delicious if you just eat it like a castella^❤️^
Ingredients
(deep round cake pan (15cm diameter))
Eggs 3 (About 165 g)
Sugar 90g
Cake flour 90g
Vanilla powder 2g
(Vanilla extract available)
Unsalted butter 30g
Milk 30g
Things to do before making batter ~!
1. Melt butter and milk
2. Put wax paper on a round cake pan
Process
1. Separate 3 eggs into egg whites and yolks
2. Whip egg whites a little.
3. Add sugar to egg whites.(divide 3 times)
(Hand mixer low speed)
Please make a tight meringue.
4. Add one yolk and whip and repeat the process
5. Add the sifted flour and vanilla powder
6. Mix it with a spatula as you can see in the video.
7. Make sacrificial batter
(Some batter + melted butter + milk = sacrificial batter)
And mix it in the batter.
(Ideal melted butter+milk temperature : 60 °C
If the temperature of the butter is high,
it will mix well with the batter)
※If the temperature of the butter is too high or too low,
A nice castella will not come out.※
8. Fill round cake pan with batter
9. Bake at 150 ° C for 35~40 minutes.
(Please adjust the temperature and time according to the Airfryer.)
※ Bake at 170°C for 35 minutes if you want to bake at oven.
※ If you want a firm sponge cake, add 10 ~ 15g of cake flour.
-What's the difference between Genoise and Castella?
Castella has a higher percentage of eggs than Genoise.
But,, in fact, there is a bakery that makes these two products in the same mix.
