Suji ka halwa is a popular Indian dessert made from semolina (suji or rava), ghee (clarified butter), sugar, and water or milk. Here’s a simple recipe for making Suji ka halwa:
Ingredients:
- 1 cup suji (semolina)
- 3/4 cup sugar(optional) or jaggery syrup
- 1/2 cup ghee (clarified butter)
- 2 cups water
- 1/4 cup milk (optional)
- A pinch of cardamom powder
- A handful of chopped nuts (almonds, cashews, raisins,dates) for garnish
Instructions:
1. Roast the Suji: Heat the ghee in a pan on medium heat. Once the ghee melts, add the suji. Roast it on medium-low heat, stirring continuously, until it turns golden brown and gives a nutty aroma. This should take about 8-10 minutes.
2. Prepare the Sugar Syrup: Add the jaggery syrup and stir until it dissolves completely. You can also add the cardamom powder at this stage.
Stir continuously to avoid lumps.
3. Cook the Halwa: Keep stirring the mixture until it thickens and the ghee starts to separate from the sides of the pan. This will take about 5-7 minutes.
4. Garnish and Serve: Turn off the heat and garnish with the chopped nuts. Serve the Suji ka halwa warm.
