Recipe for the potato salad:
5 pounds peeled potatoes
Six hard boiled eggs
2 cups of Mayonnaise
1/2 cup of chives or onions
1 tablespoon Dijon mustard
1 tablespoon yellow mustard
One cup sweet pickle relish 
1 tablespoon apple cider vinegar
Salt and pepper to taste 
Boil the potatoes until they are just fork tender. Peel and chop the six boiled eggs, reserving one for garnish. 
Mix  mayonnaise, chives, Dijon and yellow mustard, sweet pickle, relish, and apple cider vinegar and salt and pepper until combined.
Pour the dressing over the potatoes and mix gently.
Quarter one boiled egg for garnish on top. For the best results make this at least four or five hours ahead, or the day before.
