Dua Lipa’s Perfect Roast Chicken:
- Take your chicken out of the fridge half an hour before cooking so it is room temperature and set your oven to 240°C (for American ovens, this is roughly equivalent to 450°F, or 465°F if you're able to change your oven temperature in 5° increments).
- Wash and prep your chosen vegetables. Chop the tops and bottoms off, then halve them widthwise then lengthways.
- Keep the skin on the red onions, chopping just the tops off, allowing the skin to fall off whilst cooking (dispose of the skin once it's fallen off during your cook). Repeat this step with your garlic.
- Add all your vegetables to a large metal roasting tin and lay your chicken atop them.
- Cover the contents of the tin in extra virgin olive oil, salt, and pepper.
- Take a handful of fresh or dried herbs of your choice and place atop the wings of the chicken and mix amongst the vegetables.
- Cut a fresh lemon in half and stuff inside the chicken.
- Before putting the chicken in the oven, turn the oven down to 200°C/ (for American ovens, 400°F). Put the chicken in to roast for 80 minutes, taking it out halfway through to baste with its own juices from the tin.
- Once the chicken is cooked, let it rest for 15 minutes before serving. Don't forget to dispose of the onion and garlic skins!

Love Dua, her music is great, she comes across as such a chilled lass, not only here on this platform but in interviews too... Can't beat a good roasted chicken with mixed roasted veggies... Om nom nom however, if I may offer a word of advice Dua "if you're reading?" Always remove the "trussing & season the bird before placing in/on the baking tray." Removing the trussing string & Seasoning before hand enables you to reach every nook & cranny, giving you an evenly seasoned bird. Same with the veg, season first then add to tray. Seasonings such as "All Purpose, Chicken, Cumin, Garlic & Onion Powder and maybe Paprika smoked or plain. Even making a paste with some oil and a chicken or veggie stock cube and rubbing that all over the bird is another option to try, the possibilities are endless... Cooking is all about flavour & using good quality produce, and"judging by the look of that bird, we can tell it's quality & must have tasted amazing with those veggies." And I know many don't like spice or too much seasoning "I get that & appreciate that" and maybe that's the case with Dua? All the same, steller job Dua, but if you fancy being a little bit more adventurous going forward, maybe have a try with the seasonings aforementioned. Love & light to ya, always. Hi, I am into cooking, too! so nice to see you in the kitchen … I had to change my way of cooking because in 2020 I was diagnosed with stage 3 breast cancer …. Now I am cancer free without chemotherapy radiation and surgery…. I am vegan and I use a lot of leeks, carrots, celery, Chinese cabbage , ginger, lemon, spices … and I am trying not to overcook them … it is so great that you buy your meat directly from a butcher …. it is good when you marinate your meat before cooking it You are lovely and so calm in the kitchen!❤️
