Thanks for stopping by! Today I knocked out some super easy chicken wings on my Gabby's Grill Santa Maria attachment for the Weber Kettle. If you're not familiar with what a Santa Maria Grill is, your missing out! These things are fun to use. With this attachment, you can now bring Santa Maria style cooking to that old Weber kettle you have laying around.
I took a couple of packages of fresh chicken wings from my local grocery store and trimmed them down. I Got them seasoned up with some Holy Voo Doo by Meat Church. Man, this stuff is no joke. I think it was made for chicken wings!
For the grill, I started up a half of a chimney of Royal Oak lump charcoal and topped it off with a half of chimney of unlit coals. Once all of the coals began to burn, I added two small splits of oak for some good smoke.
Wings went on with the grate set to about half way. Total cook time was around 25 minutes, flipping once half way through. I had to pay careful attention to the flame so the wings didn't burn. I love cooking this way because its like cooking over a camp fire and hey...who doesn't like a good camp fire?
For my first time cooking wings on this Santa Maria attachment, I couldn't be happier! They turned out juicy and crispy! The rub provided an awesome color and the flavor was out of this world. No sauce was needed for these wings.

You are going to have a blast with that thing. Troy gave me one of his and I’m surprised how much I love it. Such a fun way to cook. Wings look good.

It might just be my favorite way to cook chicken now. I think chicken quarters would turn out good. My 4 year old would say it's his favorite way to cook hotdogs lol

The hot burning wood make for good smoke, so I think you’re right on there. Cooking on coals alone is just, well, cooking on coals without much smoke. Great looking wings, but you left out the money shot! Bite into them wings!

Well done brotha, the wings looked awesome. I've been thinking about getting the Gaggy Grill and after seeing your vid, I think I'm gonna pull the trigger and get one for this upcoming summer!! Thx for sharing!!

Great cook you did awesome on the Gabbys grill attachment. My suggestion for your next cook on it is a tri tip if you can find one. I like your instant read whould love to know where to get one especially that color.thank keep up the. Good work.

By the way, my thermometer came from Amazon. It's the javelin pro instant read thermometer. It comes in a variety of colors. I love it!

Gabby's works for a few years, then will warp and mine kept slipping out of the side. Junior, the owner, never addressed it and after being in business over ten years, he's only got ten biased reviews ( not including mine which he never posted). There's way better grills out there for a Santa Maria attachment for a Weber.

So I'm finding running a similar rig (Titan grill + Weber 22.5") using 3-4 half splits around the very outside and lump charcoal in the middle works well. Everyone I see online builds a central fire, then immediately moves meat to the outside escaping burning because the middle of the grill is so friggin hot, but the outer rim isn't. Why? Believe me, even with little (or no) fire in the center of the kettle, the middle of the grill grate is hot, making the temp much more even across that grill. Now you're just using distance from the heat, like you want. My 2 cents.

What works for you is the best way to do it! I think people get too caught up in "you have to do it this way". I love trying new ways to cook and set up the grill. Thanks for sharing and watching!

Honestly, Holy Voo Doo will probably be my go to wing seasoning. It had the perfect amount of spice for my taste. Definitely one of the best rubs I've had for no sauce wings. You gotta try it!
