Thanks for stopping by! Today I knocked out some super easy chicken wings on my Gabby's Grill Santa Maria attachment for the Weber Kettle. If you're not familiar with what a Santa Maria Grill is, your missing out! These things are fun to use. With this attachment, you can now bring Santa Maria style cooking to that old Weber kettle you have laying around.
I took a couple of packages of fresh chicken wings from my local grocery store and trimmed them down. I Got them seasoned up with some Holy Voo Doo by Meat Church. Man, this stuff is no joke. I think it was made for chicken wings!
For the grill, I started up a half of a chimney of Royal Oak lump charcoal and topped it off with a half of chimney of unlit coals. Once all of the coals began to burn, I added two small splits of oak for some good smoke.
Wings went on with the grate set to about half way. Total cook time was around 25 minutes, flipping once half way through. I had to pay careful attention to the flame so the wings didn't burn. I love cooking this way because its like cooking over a camp fire and hey...who doesn't like a good camp fire?
For my first time cooking wings on this Santa Maria attachment, I couldn't be happier! They turned out juicy and crispy! The rub provided an awesome color and the flavor was out of this world. No sauce was needed for these wings.
