Looks delicious! I’m going to have to try this. One spring roll flavor augmentation idea that I do - for those who like spicy food - is to dribble the filling with a 50/50 mixture of sesame oil and Korean gochujang. Just a few drops per roll right before rolling it up.

Locally, these are called summer rolls, whereas spring rolls are fried, but they use a thinner wrapper than egg rolls, at least that's my assessment. These look delicious by any name and you can't go wrong with a rich and savory peanut sauce to dunk them in. Yumm!

I made these today. Due to a peanut allergy I subbed in sunnie butter and maple syrup instead of sugar, and the dipping sauce was still super, I did not need to add any additional water. I love your tips on slicing the carrots so thin, after watching you struggle to squeeze them in, I cut mine shorter. I also added a slice of avocado in each roll, with a little lime juice to keep them from browning too badly.
