I wouldn’t soak coconut BUT just add enough hot water to bring dried coconut to soften! Doing this we would keep all the goodness of coconut flavor, the milky, the natural sweetness of it. Thank for video, I will make it soon because I love coconuts and your recipe as well.

It seems like roti isi kelapa in indonesia.. the coconut with palm sugar filling called with "enten-enten kelapa". It will be more delicious if we use fresh coconut grater.. if we add pandan leaves (Pandanus amaryllifoliu) during the cooking process, it will strength the fragrance! 😄😄
