Two types of tender coconut. The one which is green and with less external layer (coir) will be very tender. It will have more water and may not be sweet. You don't have the endosperm (malai) inside it. However, it is best for having coconut water with less sugar. I personally prefer this. The other variant is with more malai (endosperm). It is like a more aged tender coconut. It will have less water but will be sweet. The shop people cut the coconut into two to take out the endosperm and offer you for eating. So if you only need water with less sugary, you have to choose the tender one. Not the second one. We can request the shop guy to give the one with water or with endosperm (fruit part).
