Ingredients:
Rice - 2 tbsp
Chana Daal - 1 ½ cups
Papad Khar - 1 tsp.
Groundnut Oil - ¼ cup
Curd - 3 tbsp
Tumeric powder - 1 tsp.
Asaphoetida - Pinch
Salt To taste
Ginger Chilli paste - 1 tbsp
Sugar - 1 tsp
Finely chopped ginger - 2 tbsp
Eno - ½ tsp.
Baking soda - ½ tsp.
Method:
1.Soak together rice and chana dal in a bowl for 4-5 hours
2.Drain the soaked rice & daal and crush to a coarse mixture.
3.Add the papad khar and groundnut oil and hand beat the mixture.
4.Add the curd and mix well and keep for fermenting for 5-6 hours.
5.To the fermented mixture add turmeric powder, asaphoetida, salt to taste, ginger chilli paste, sugar, chopped ginger, and mix.
6.Put the steamer on the flame with a greased tray in it.
7.At the final stage add eno and baking soda to the mixture and pour it in the greased tray that was put in the steamer.
8.Steam cook for 12-15 minutes and then take it out and cool.
9.Cut the khaman in the tray and keep aside.
For Tadka (Tempering):
Ingredients:
Oil - 3 tbsp
Mustard seeds - 2 tsp.
Green chilli - 2
Asafoetida - ½ tsp.
Curry leaves - 10 to 12
Water as required
Method:
1.Heat oil and add the mustard seeds, as they crackle add the asafoetida, green chilli and curry leaves and finally add little water.
2.Put the above tempering onto the Khaman tray and serve the hot khaman with garlic or green chutney.
