He caught a flat head, sail cat or saltwater catfish....they are no good to eat. If it was a channel cat, blue cat or butter cat absolutely...skin and fillet that sucker out....but living close to the Gulf...saltwater cats are right up there with mudfish.....pure trash. Hey man we get them in South Africa Saltwater Catfish are trash fish, they aren't bad tasting but more of a pest to us fishermen. We also get a lot better fish in the ocean so we don't usually keep them, I've heard they are good fried but to each their own.

Freshwater catfish tastes a lot better than saltwater or brackish. Those intracoastal channel catfish in Florida also tastes horrible.
