Wow! I never expected THIS many views when I originally posted this video for my 1K subscribers. Thank you!!! A few things I want to address that are frequently commented or asked: 1) Here is where the home baker got those amazingly sturdy boxes: www.flourconfections.com 2) Unboxing starts at 5:22 3) Yes, there’s a lot of talking-it’s an explanation video and I wanted to be thorough, but I’ve also changed things up in my newer videos since creating this one! 4) I gave two bakeries the same picture with the same requests and I really was just expecting a slightly different interpretation of each; I gave the professional bakery a chance to correct the issue twice, but unfortunately it didn’t work out. No complaints at all from me to them. They were sweet and cordial. As a baker, I understand how these things happen especially with new techniques. I’m sure if I had requested it, they would’ve restarted and done something different. However, no reason to cause more undue stress to redo something that wasn’t for an event. I’m still impressed that they gave the sugar sheet a try. Once again thank you so much for watching and for giving me input about which one you would’ve preferred. I never tell a customer I can make the exact same cake. I ask if they have an image for inspiration. I say this because I am not the original designer and we may be working with different tools and using different techniques! I just don't want to promise anything and disappoint the customer. One thing I can guarantee is that it will look nice and taste good.😊

Home baker. Hands down. The storefront may have tried the sugar sheet technique, but it failed. As a customer, I'd rather the cake look nice with a different medium than look a hot mess with the medium I asked for.

The home baker gets it 1000000% by saying both it wouldn’t be identical - she didn’t promise sugar sheet nor did u ask for it, and her cake didn’t look a hot mess I really hope you have her a review! What's the best about her is that although she made her own cake to perfection but she was still very very kind about the failed bakery cake and the not so similar home bakery cake, not to mention that she actually covered the failed attempts with very kind explanations and was almost apologetic on THEIR behalf ! For me this kind of gesture has my instant respect. You are a genuinely great person worth a lot of respect. Blessings be on You !

After many years I noticed that there wasn’t too big of a difference between home bakers and professional storefronts in terms of custom cakes-a lot of the time bakeries are hiring home bakers to decorate cakes!!

"And I personally like eating buttercream as opposed to fondant." Please say that about a thousand more times. Maybe people will get off the fondant train. Seriously, it tastes like playdough. Also, I will say that one problem I've noticed with many bakeries (at least in the US) is that they aren't staffed by trained pastry chefs. So, many of them are really decorators, who don't actually have the years of study/training required to be a proper pastry chef. I.E., they don't have the knowledge of food chemistry and how to fix things when problems arise.

I hate bakery fondant-like Satin Ice or Wilton-gross! I make a homemade fondant that is really good, it’s what I use on my cakes-it’s easy to custom color and doesn’t ever dry out and get that “crust” some fondants can have and in the end, it’s all about flavor of the cake as a whole 😃

Yes! At the shop I used to work for, people thought our smooth iced cakes were fondant. Their mind was blown when I’d say “these are buttercream iced” Many of them very happy they didn’t have to have fondant cake for their weddings.

I made fondant once (not a home bakery just a good and meticulous cook) I went with marshmallow fondant because I heard normal fondant tasted horrible. I was surprised by how good it tasted, and how incredibly easy it was to work with. I’m not artistic at all so I expected my result to look like a toddler craft , but I was super curious about marshmallow fondant and wanted to try it

The first one did their best using techniques they knew how to do. I'd still be happy to have that cake at my party, whereas the second one leaves me without a cake for my event. You can't possibly use the second cake.

@@a_lethe_ion The main reason people are willing to pay so much for a cake is because they don't know how to decorate a cake to look nice and pretty, so they pay someone who does. If you receive a cake that is a hot mess and you don't know how to fix it, then the cake is unusable.

Home bakery had a prettier presentation. Even if the brick and mortar one had stayed together there are a lot of things that make it hard to tell what I'm even looking at. The sugar, butter cream, and decals all blend together. And the only thing that pops out is the strawberries. What I like about the home bakery is that they took the time to think about the color. Because I can see the gold on one clearly the other not so much. I also appreciate the touch if the candle. It's not like the ones you get in the packs at Walmart. And it matches the cake. Home baker's wins in my book.

Good point! I also believe the nice packaging had better climate control, too. But on the negative side, it probably added to the cost, but I think was worth those few dollars. And that candle! A sweet touch, and personally, I loved the candid footage when her breath blew out the flame. It seemed a metaphor in general for how regardless of what you know or try, make room for mistakes. The baker on this channel is one smart cookie and appealingly kind.

Just some recommendations for your videos. I think the viewer needs to see a some close up shots of what you are talking about. For example you made a comment comparing the gold edges but we as the viewer cannot see. Also when you cut the cake we never got to see the inside. I would have loved to see the cake you made pop up a few more times as a reminder of what you were actually comparing them to. I think you are great and are great at doing videos. Taking time to do some close up shots would be so much more fun for us to watch. Seeing a nice close up of the inside would have been a rewarding moment. I know it takes more work to edit but your channel will blow up with subscribers! I know you didn't ask for feedback. I just think your great and could be amazing!

I've come across this trend of ordering two cakes and reviewing them but it's alway by people who have no baking experience, just doing it for fun. I think it is a win for the home baker, because although she didn't use the sugar sheet technique, her cake remained presentable and the white bc gives it a nice contrast. Kudos to the bakery for attempting the sugar sheet technique in the middle of a busy schedule!! I think what happened with their sugar sheet was that they probably used regular granulated sugar instead of sugar crystals, and probably did not have enough time to set. Composition wise, the bakery's cake lacks some contrast, it's more a one tone design.

Idk how it works for bakers but when I worked as a graphic designer, we were told never to do “exactly like the photo” unless it was the clients own artwork they were requesting to be remade. 3 things had to be changed or made differently.

There’s always a debate about this! Some bakeries (professional/home baker) will say straight away that they will not replicate, but will make something similar. Others say they will do it exactly (or as close as possible).

As a pastry chef I personally hate to copy someone else’s work exactly. It makes it boring because there is no freedom of expression. Plus what if I think I can do something but it for some reason doesn’t work out. I never want someone to be unhappy with my work. I would rather say I can try to make it as similar as possible.

The $63 cake looks like a train wreck and as I hate coffee, I wouldn't have wanted the mocha flavor. Even ignoring the sugar sheet problem, I thought the top of that cake looked messy. I don't do what you did and the minute I saw it, I recognized that they hadn't made the top the way you had. That chocolate thing sitting on the strawberries took away from them completely. Just messy looking. They other one looked great.

I think you were very kind. The “professional” cake was everything but professional looking. If I had ordered this for an event it would have been a catastrophe. Honestly, I can’t believe they let it leave their bakery, as they told you they could recreate it exactly. The home baker, hands down was the better cake.

As a home Baker I do want to mention that we ask for a deposit because we don’t always have the ingredients on hand like a store front would. It helps us a lot. I think I’m biased but the home Baker was wonderful.

Do you give them feedback as a baker about how wafer paper doesn't react well with moisture and the professional bakery about making sugar sheet thinner? I think that would be really helpful for two small businesses to know that info.

I will say that it is admirable that the professional bakery took the courage of doing the sugar sheet. The fact that it collapsed is admittedly disappointing but even then If I had asked it for an party or something like that I would probably still serve it, since if you took the parts that were fallen of I could be passed as a texture effect onto the side of the cake instead of being meant to rise above it

Congrats on 1000 subs. I love the homebaker. That is inexpensive in my area. That is the price of a bare basic non customized smallest cake from a bakery. They run double that here for a customized one that is the size on the left. I think the sugar work would add more money on top of that bc the customized is really just adding your name and picking colors to a standard cake(s) options and flavors. Homebaker for the win congrats to them.

Just subscribed after watching this. You were very kind in your constructive criticisms, where some might have been harsh. While I do appreciate the fact that the professional bakery did try to do the sugar sheet technique, they failed and also didn't notify you that there may be differences to the original. The home bakery gets my vote, as they let you know upfront that cherries weren't in season, and that they may not be able to replicate the cake exactly. It also looks tastier, to me. I can tell they took their time and tried to get things to be as perfect as they could make them. The professional one looks rushed, in my opinion. While I understand that professional/storefront bakeries have a lot of orders, they should never rush in making an order for someone. When someone orders a cake from a bakery, they expect it to be what they ordered and to look nice and taste good for their special event. How embarrassing and heartbreaking would it be if they purchased a special cake for their party or their loved one, and got the one on the left! It would be a very sad day for everyone, but especially for the person who ordered it. There are moments in your life that you don't ever forget...they may not be at the forefront of your mind, but they come back to haunt you at times. This would qualify as one of them if you were so proud to bring out the cake, and it was a total disaster. I mean, think about how upsetting that would be when you wanted something really nice for your loved ones/guests, and it wasn't worth the money you paid for it. The cake is usually the star attraction at most parties, and it would be a horrible let-down if it was a mess.

Actually I think the home baker did a better job even though they didn’t use the sugar sheet technique. I believe they probably realized that the sugar sheet may not hold up over time because of refrigerator moisture and possible weather conditions (as we saw happen in the other cake). Also, the boxing of the cake was much better and the adding of the candle was a really nice little touch. It also sounds like the communication was better with the home baker. As a customer, I would appreciate the extra effort that went into the home bakers cake, so that is the one I would choose.

When asked for exactly, I always say I can try, but not sure if it will be exactly the same, the only places I have seen can make exactly the same cake over n over is places like Walmart, the bakeries in I think China where they kick out 100's of the exact cake on an assembly line, and those using edible image printers.... But anything done homemade, by hand, from scratch, is never the same. I can try to get the color, flavors, and inspiration as close as I can. I also will turn down a request for something I have not yet learned or mastered. I have never tried modeling chocolates, rice paper, Sugar Sheets, not very good with - fondant, sugar glass or wafer paper, but I am practicing to get better. Buttercream I where I shine the best... And fruit fillings is a definite, not till I do more research, as my last cake weeped a lot lol

Oh but for those two cakes, I think the home baker didn't do the sugar sheet, and if they had attempt it, why not say, I tried and was not able to make it exactly. Kudos to the bakeries turned down the request not knowing how to work with sugar sheets, and kudos to the bakery who tried. You said at first inspection of the cake it was standing. It just didn't hold up, and you know they at least tried. I would prefer an honest baker... I made a Mike and Sully cake for my grandmson I call Monster Man's first birthday. I even made 2-4' tall Sully's and 2-1' tall Mike's that floated from balloons, made some other monsters and agents from the Monster Inc movie. It was such a hit. I did it again for his 3rd birthday reusing all the decorations from the first party, but I ordered the cake as I didn't have time to make it. I asked for a chocolate cake, buttercream frosting, and if she could do a monster Inc theme. She quickly said, 'I can not make a cake and call it Monster inc. as Disney has all rights to that. And I could be sued... But I can make a cake, with hand piped figures that closely resemble the monsters in question. But I can't make exact or I can be sued...." To which I was like good enough... It was so close Everyone thought it was perfect. And for $60 on a full sheet cake with actual buttercream (not shortening based) frosting, with hand pipped furry monster and a smooth round green monster she did amazing... But in all fairness, she was a home baker who just bought a store/closed down bakery with maybe 2 helpers. So she was more in touch with her customers, then you get with a big store bakery.

The first cake was definitely similar to your cake but didn't have the panache. I got into cake decorating because I had a hard time getting any consistency in quality of the cakes and decorating. Every fbig family occasion got two years was almost ruined by big bakeries big , careless mistakes. They didn't seem to care if they lost customers either. So, when my son was 2 and all his pre- school friends wanted dinosaur cakes or Bob the builder cakes I took professional courses. I only sold cakes if a friends family twisted my arm. I really wanted to do this for family members and for families who couldn't afford store front cake prices. I stopped once my children were older. I still have problems getting cakes to meet basic expectations. So, I do slot of cheating. I buy a good quality basic cake from a store, upscale grocery store or warehouse club and I do the decorating. I still spend at least two hours but it makes it manageable for me. I get slot of requests from family for the anti gravity cake! Lol!! Even with this strategy, one of my sources let me down. My central a/c wasn't working around the time for my son's 21st birthday and I ordered a cake and then did my own decorating. But the cake tasted terrible. Like it had a baking accident! I felt very embarrassed. I sent big wedges home with people in custom boxes, and I had to call them later and tell them to throw it away. I said I was jinked again by the party fairy. When I took the leftovers back the store didn't even seem concerned. They did refund my money, but it didn't seem like they were even going to look into the matter. Very upsetting! I am not on Facebook but I told my husband that maybe we should be. Lol!

Even I learned a few things from this. My biggest lesson learned was: take a photo at the bakery. 😭 The second lesson: thoroughly understand the physics of the media you’re using. If the authentic copy had been bone dry, it would have retained its shape. 😥 That’s so sad. I hate to see anyone fail after trying so hard. (I’m ignorant of baking as I actively avoid it, but this was beautiful to watch, and I’m excited for this channel’s growth. I love it when entrepreneurs and small ventures succeed.)

I like the home baker cake better of the 2. It just looks cleaner. Not crazy that they used the wafer paper but the look of the cake to me is prettier than the bakery cake. But I would love to know where she got that box from... I can not find any like that here is the US.

I should ask where they got that box! I’m pretty sure it might be from our local cake shop in which case it can’t be purchased in bulk, but the added price I think is worth it as this style of box makes it way easier for transport. 🥰
