Swiss Meringue with Pasteurized Egg Whites

You will need:
1 cup of store-bought egg whites (or fresh egg whites)
2 cups of granulated sugar
Flavor extract 1 tsp (optional)
1 pinch of salt (optional)
1 Thermometer
1 Mixing bowl and globe
1 Pot with water for barne-marie

Thanks for sharing Yolanda.. So much easier and faster than using fresh eggs 🥚. How long are the carton of eggs good for once you open it?
