This is the video I’ve been looking for! Just had some incredible Kibbeh in Los Angeles. The casing was so thin & crisped and the filling was so moist. This is the only video that looks to be achieving something similar. Thank you!

Okay, this is BY FAR the most complete video oh kibbeh recipe that i've seen on youtube, Bushra! Thank you SO MUCH! I'm brazilian, but my father's side of the family is lebanese and i've been trying to make a kibbeh thats as tasty as my great grandfather used to make when I was a kid, and could never achieve it. My kibbeh dough never looks as smooth as yours and always ends up looking super chunky and sometimes it breaks apart when i'm frying it. After seeing your video I think I may be using the wrong type of bulgur... the ones i usually find here in brazil are very dark and chunky! I'll look for syrian or lebanese bulgur online the next time. Again, Bushra, thank you! I'm so glad you're back on KZfaq!

This is the perfect recepe, I am not Lebanese or Syrienne but in my country ( Martinique)many of those nations migrate in our country so we exchange our culture. So her version is the BEST... Very tasty, healthy, bulgur grain is fiber the oat from bulgur grain and all other ingredients make even the best. Bake or fried in olive oil for frying its amazing.. Thank you ...

awesome video. I had it when I was little. A lady who was a friend of Mom's made us this and syrian bread and grape leaves. Such a memory from when we were kids. Thank you for making this very thorough video. I enjoyed watching you and your mom making it together. My Teta used to make this all the time for us and I am trying to make it now for my own family. My mother and I are going to make it together for the first time and try and do it Teta's way (even though she died when I was too young to learn to cook, my mother helped her make it and still remembers her way). We don't have her exact recipe but this looks really similar!

This looks amazing, thanks for the detailed video. My family’s from Damascus and we have variations of the meat filling that includes spinach and pomegranate seeds with the pine nuts and walnuts. So good! So tangy! This was also one of my favorite foods as a kid, I distinctly remember sleeping over at my grandparents house and gobbling down 3-4 with lentil soup when I was in second grade and they were very pleased by how much I could put down. My tete took advantage of this fact by making it CONSTANTLY as her way of showing love, eventually I got sick of it and stopped eating for a few years 😂 But now I’m back on the kibbeh train and learning to make it on my own :-) Thank you for sharing!

In the Kibbeh dough my Sito used #1 bulgur, extra lean ground steak or a mixture of beef and lamb and salt and pepper, nothing else. The Hushwee she fried onions, ground lamb or beef, pine nuts, summon, a lot of nana and salt and pepper. Baked everything in her homemade summon. Delicious. She came from Oyounalwadi Syria. This is how they made it in her village. No other ingredients.

There is an electric mixer by Hamilton Beach, and a specialty attachment, that produces a continuous cylinder of a really thin, raw shell. All you need is to cut it to size while coming out of the machine. Then you close one end, you fill the shell with the stuffing, and finally close the other end. It’s still a delicate operation, but, for a beginner, an excellent solution. The raw shell comes out of the accessory perfectly shaped and smooth. Good luck!

I make my kibbeh totally different. I take my bulgar wheat sprout it and after it sprouts I add my ground beef, salt, pepper, and powdered garlic and mix all the ingredients together. Then I take the bulgar mixture, shape into balls, stick my index finger and make a hole. I deep fry them. I then pickle my onions. Once the kibbeh is done, we put the pickled onions in the hole and eat. It’s delicious. It’s the way my mom taught me how to make kibbeh.

Love your recipe and will definitely give your filling a try. Actually, my mom (a pro cook of Middle Eastern cuisine) and I grind all the meat and bulgur together twice before kneading the dough to make it easier for us to incorporate the meat in it. What do you think of that? Also, glad to find a cooking channel by someone who clearly likes BTS :D
