Been wanting to make this stuff myself for a while now. It is by far the best sauce TB has, especially since they got rid of the Salsa Verde (at least where I live). Thanks for the lesson and you got a new sub today. Clean video, informative and no unnecessary sponsor babble and such.👍😊👏

@@ChefJohnPolitteItsOnlyFood I have made now 2 batches. The first following your recipe exactly came out with a nice sweet smoky flavor. The second, I replaced the apple cider vinegar with the liquid from a jar of pepperoncini, which I had added whole garlic cloves to 3 weeks earlier, and reduced the sugar to 1/2 cup. 2 slightly different flavor profiles and both are delicious.

OK, so I hate to say it, but this recipe does not produce anything similar to Diablo sauce. Someone put this on the Internet a few years back, and I made it then, so I'm speaking from experience. Although I am not a professional chef, I know how to cook, and I do it well. I'm not some novice who doesn't have a clue. First, 16 oz of tomato paste is ridiculous. That's nearly three standard sized (which is 6 oz.) cans. There is not nearly enough water/other liquid to balance out all that paste. Just to be clear, that's 10 oz of liquid and 16 oz of paste. That is WAY too thick. And from your video--and every other video that tries to show this--you're not using 16 oz of the paste. It looks more like 6 oz, comparing it to the sizes of all the other ingredients you show in the video. And just try to find a 16 oz can of tomato paste. You won't, because no company makes one (OK, maybe somewhere in the world there's a 16 oz can of it. Somewhere, perhaps). Tomato puree is the first ingredient (water being the second). I don't know if you've seen tomato puree, but it's got the consistency of a slightly thicker tomato sauce. Also, I'm wondering if you've actually tried the Diablo sauce from Taco Bell. Vinegar is nice and all, but it doesn't create the same acidic flavor that the Diablo sauce has. Somehow there is an additional acid, perhaps hidden in the the "spices" portion of the ingredients list. And the smokiness added by the two different forms of chipotle is far too much. At most, there is a hint of smoke in the real diablo sauce. A HINT. Aji Panca is great, too. There's no Aji Panca in the real Diablo sauce. It's just not a flavor that exists in it. And yes, I do have--and use--aji panca in other things. I'm familiar with it. One of the last ingredients is paprika extractives. This recipe has nothing related to paprika in it. Anyway, I would suggest you try the real sauce, and then compare it to the sauce your recipe creates. You'll find that they're both hot sauce-like things, but that's where the similarities end. They won't taste remotely similar.

@@ChefJohnPolitteItsOnlyFood Funny response. If I posted a copycat recipe of a publicly available item, and I thought it tasted extremely close to the real one (and why post it if it doesn't?), then I'd totally defend it when someone said it's not even close. Unless, of course, I'd never had the real one to compare, or didn't truly care 'cause all I really wanted was for my video to get views. In which case I'd say "Thanks for your comment and thanks for watching. Have a great dat!(sic)"

@@aseriesoftubes66 I appreciate your critique of the video recipe. I did check it out and changed the typo of the quantity of tomato puree from 16 oz. to to 6 oz. Thank you for pointing that out. There are literally hundreds of copycat recipes out there for this sauce, and I am merely showing a version of it to viewers who are interested in trying to create it. Just because it doesn't agree with your version, doesn't mean it is wrong or the incorrect recipe. Once again thank you for watching and posting a comment. Have a great rest of your day!

@@ChefJohnPolitteItsOnlyFood OK, OK. I'm not saying that I have a good recipe for this. So it's not that your recipe doesn't agree with mine. All I'm saying is that it simply doesn't create a sauce similar to Diablo Sauce, for a number of reasons. Strangely I like Taco Bell, and the Diablo Sauce is pretty unique. I've eaten a lot of it. I went in search of recipes for this (there aren't literally hundreds out there -- come on), and you know how the Internet works; once one copycat recipe is out there, regardless of whether it's good/bad/not-even-close, it gets used by countless sites, and then pretty much becomes the only one that can be found by typical search engine techniques. That's the story with this Diablo Sauce recipe. Clearly there are just too many things hidden within the "spices" portion of the ingredient list, and thus far, attempts to identify those spices have been unsuccessful by those who would do such things and post them on the Internet. Anyway, perhaps I'm the one who's going to have to try to figure them out! Ha ha!
