Made this tonight, was really good! Make sure marinade is really thined out or it gets almost pasty in the middle of meat. Adjustments I made: Used kosher salt, 1/4 TSP ground black pepper, 1 TSP ground cummin (didn't have seeds), 1/2 TSP paprika, 4 bay leaves, and could only get fresh poblano peppers(I dried 4 poblano seeded and 2 red bell in oven for 12 hours at 180f and then rehydrated per video). Next time I will half the cloves and cinnamon. Also only had 1 jalapeño and 1 tomatoe for the salsa but it turned out excellent with a pinch of salt. I also put this on my bbq rotisserie with pineapple rounds between the meat, start shaving at 1.5 hour and then every 10 min after. Had 2 outside BBQ burners on low that gave me 400 temperature.

I know this is an older video, but I just had to comment. There is restaurant here in Seattle that is owned by a Mexican family called Sal y Limon! I go there often with my daughter, she always orders the Illegales and I always get the street tacos (Tacos al Pastor)! Once you’ve had great Mexican food, you can’t accept any substitutes. I have been watching videos like this for a couple weeks because I would love to make this dish at home. It turned out so well I literally use your recipe once a week now to make Tacos al Pastor!!! Thank you for sharing!! I grilled it on a grill sheet and put foil over it, and poked some small holes. It's perfect for grilling! Baking takes to long, it's a mess, and doesn't give it that spit grill smoke! Trust me grill it!!! it's like taking a free trip to Tijuana! ( If you are not planning on making more than 5lbs of pork no need for a spit! It'll be to small 3lbs doesn't cut. and I recommend using pork tenderloin.)

I made this on my Big Green Egg using a Trompo King (google it, great for grilling) to stack the meat. These were some of the best tacos I've ever had. Thank you so much for this recipe!

Great recipe. I made this last night. My only suggestion is that after you slice the cooked meat off the spit, crisp it up with the drippings in a frying pan and then serve. Otherwise the pork has more of a consistency of pulled pork and is a bit mushy.
