The tagine cooks like a Dutch oven. I have a large one for 4 people and got two single serve tagines while visiting Morocco. Very versatile to cook in an oven, stove top, BBQ or outdoor fire. You can cook any meats even fish and they come out great.

Mmm very jealous! Good job! Tagine is probably my favourite way of cooking. If you can find and unglazed tagine you get an amazing flavour from the clay. One of the best dishes I ever had was a lamb and prune tagine in Morocco. This style of cooking is probably the most suited to camping as you just put what you want in a pot and leave it! Sounds simple but there is a real art to it, cutting up and layering the vegetables so they cook perfectly.

Oh man, that looked lush, Andy. My little local store never seems to carry any lamb so I've not one cooked one of dishes for a while. Last time I did, a handful of chopped, fresh coriander leaf, added near the end, really lifts the dish. Totally optional, though, eh?
@AldoSchmedack

Lamb is worth seeking. But a shoulder to save cost and cut up in chunks. Get rid of fat and bones and cartilage and have at it. Even ground lamb if nothing else. Worth going to a butcher even asking a local meat market to order some in. Lamb I grew fond of quickly. Only don't like goat. Off taste on some goat meats. Goat milk is good though. But lamb is A FAV.

the commentator shows himself to be quite a competent and skilled cook. i like the way he adds the components, eg onion into the tangine progressively and as a consequence ends up with a decent meal. good effort tbh.

ANDY, THANKS! I lived in the Middle East for four years, decades ago, and I learned a bit about Morrocco and Egypt and, especially the cuisine, that sustained those people. For decades, I have wanted to purchase a tagine, but I was uncertain about how to use it over any fire; never mind a fire of wood coals.

Exactly what I’m thinking to do on my next camp, we just perusing KZfaq to get some ideas for recipes. Mine is a rather handy single serving sized tagline I bought on a holiday in wonderful and beautiful Marrakesh, it’s unglazed. I had to soak it overnight, then bake in a slow oven for 2 hours after coating it in olive oil, letting cool slowly, then another coating, all of which has soaked in. Can’t wait to use it over embers, the way it was designed for, although it is great over a very small gas flame. 😁
