Taiwanese Sticky Rice is called You fan (油饭). People in Taiwan will gift this dish to their friends to celebrate newborn babies. You can also serve it whenever there is a family gathering. You can tell how delicious this dish is as it has such an important societal role in Taiwanese cuisine.
INGREDIENTS
2 cups of glutinous rice, soaked 2 hours in advance (Amazon Link - geni.us/Pcq4c)
6 dried mushrooms (Amazon Link - geni.us/cwFp)
25 grams of dried shrimp (Amazon Link - geni.us/TWVg5)
200 grams of skinless pork belly
1 tbsp of minced garlic
1/3 cup of Chinese cooking wine (Amazon Link - geni.us/Bhf1r)
4.5 tbsps. of soy sauce (Amazon Link - geni.us/XhhnS)
1 tbsp of dark soy sauce (Amazon Link - geni.us/Gtoma)
1 tbsp of sugar
1/2 cup of the mushroom soaking liquid
1 tsp of five-spice powder (Amazon Link - geni.us/Q68ibM)
1 tsp of white pepper (Amazon Link - geni.us/JfSy7bh)
1/3 cup of fried shallots (Amazon Link - geni.us/itApbO)
1 tbsp of sesame oil (Amazon Link - geni.us/nIARQy)
1 piece of lotus leaf, soak in hot water to soften (Product Link - curatedkitchenware.com/produc...)
INSTRUCTIONS
Rinse and rub the glutinous rice several times until the water becomes clear. Soak the glutinous rice with clean water for at least 2 hours.
Soak the dried shitake mushrooms and dried shrimp with clean water for 2 hours.
Place a wet cheesecloth on the steamer. Drain the glutinous rice and put the rice on top of the cheesecloth. Make some holes to allow air circulation. Steam over medium heat for 30 minutes (Count the time after the water has been brought to a boil). There are many ways to cook glutinous rice, but steaming is the best method in maintaining the qq texture because the rice doesn’t contact the water directly.
During this time, you can drain the mushroom and shrimp. Save the soaking liquid to use later. Slice the mushroom and pork belly thinly.
Stir the pork belly in the wok without oil over medium-low heat for about 5 minutes or until you can see a lot of oil rendered out from the pork.
Add the garlic, shrimp, and mushroom slices. Saute for a few minutes to activate the umami flavor.
Add Chinese cooking wine, soy sauce, dark soy sauce, sugar, five-spice powder, white pepper, crispy fried shallots, and sesame oil. Stir this for a minute to mingle everything.
Pour in about 1/2 cup of the mushroom soaking liquid, reserve the rest on the side just so you can adjust the consistency later.
By now, the glutinous rice should be done steaming. Toss it into the wok. Mix until you don’t see any white rice. Keep an eye on the sauce amount while you are stirring. Turn off the heat as soon as all the sauce is gone, or else the rice will start sticking to the wok. Adjust the consistency of the rice by using the rest of the mushroom soaking liquid.
Place a piece of a lotus leaf in the steamer and transfer the flavorful rice into the steamer. Poke some holes all the way through the lotus leaf for better circulation. Steam over medium heat for 20 minutes.
Garnish with cilantro and some extra crispy fried shallots.

I live in Taiwan and have never liked this particular dish because of the taste of the dried shrimp - and perhaps also because it is so popular and served at almost every gathering, so I am compelled to eat it more often than I’d like. But watching your video gives me the idea, next time I’m cooking for guests, to try it without the shrimp and perhaps with a lesser amount of mushroom. Thank you!

I've made a different recipe of this in a rice cooker and yours looks so different! I can't wait to try it but I will change the meats a bit. Chicken instead of pork belly and I'll just use canned shrimp in place of the dried shrimp. The one time I used dried shrimp to make this dish using the other recipe it overpowered everything. I could use frozen cooked shrimp with the cocktail sauce though I toss the cocktail sauce! Don't want to buy a ton of it! Thanks for another great recipe!!!! Oh, I almost forgot! Thanks for telling us to soak those dried Shiitakes for 2 hours in warm water! I have a bunch of those in my cabinets and they always seemed to take forever to get soft. Now I know!

For Cantonese people, this is a popular dish during winter season, special occasions like Chinese New Year and at dim sum teahouses. You used a Thai sweet rice which is a longer grain. Cantonese use a medium grain, sweet glutinous rice.

Made this tonight by steaming the rice in the instant pot with the silicon steamer. Once under pressure and then on sauté with a light lid. My wife requested it and said it was the best ever. Thanks for all the great videos!

you can use chicken tight, but add more oil to the dish because pork belly produces lots of fat.

I once made sticky rice with a rice cooker, it turned out yummy but the texture of the rice was gloopy. thank you for your tip of using a steamer. Noooo, Michael. The fresh shrimp will be hard and rubbery due to all that steaming and you'll lose the whole essence of this recipe.

Mandy, I'd like to make the type of sticky rice wrapped in a lotus leaf that one often finds at dim-sum in the US. It usually has mushrooms and dried shrimp as well as cut up Chinese sausage. It's similar to this recipe but the rice is not as dark. Do you have a recipe for that type of dish? IIRC my asian friends used to make it in a rice cooker but it was so long ago I've forgotten the details.

For me the flavor of the dried shrimp and dried mushrooms are more concentrated when they are rehydrated. And buying them is more convenient for use because they have long shelf life than the fresh ones. I always have them on my pantry.

AT 6:10 you say the original recipe is steamed in cheese cloth but you don't use it because you don't like to wash the cheese cloth after it touches the soy sauce ? Why would you have to wash the cheese cloth wouldn't you just throw it away ?

Cheese cloth is a tool meant to be reused and many cultures, like Mandy's for example aren't likely to be so wasteful :)

Cheesecloth is meant to be reused. I normally wash it along with my other kitchen towels in warm water and soda and it's good as new. You can reuse it multiple times till it becomes worn out

P.S. The cheese cloth most people use here in the US is sold in the grocery stores for about $ 5 for 2 square yards, it does the job but it's so flimsy it wouldn't stand up to a single washing.
