THIS is not possible but yet here I am watching it. What is the method........stone, etc?

This was fresh back from an epic thinning and sharpening session from District Cutlery. It was all freehand on stones on a progression from 120 to 8000. I have never seen a more beautifully polished bevel (in person) and I cannot imagine a sharper knife. I highly recommend District Cutlery for all your sharpening needs... especially if it's something tricky like thinning the shoulders on a 300mm Takeda.
