This technique was absolutely killer for a dark roast. I typically don't buy them, but I was morbidly curious, and it was just way too bold and the sweetness with a lower temp was fine but didn't make up for the bitter flavors. Enter the ice-cube bloom and wow. Fantastic sweetness, not bitter at all, and excellent body. Thanks for the great videos as always, very happy to add this to my pour-over repetoire.

Great videos, thanks for pushing us to experiment and run from the routine! Now, on the first video you used 75g of cold water and on this you used only 13g of ice! Why not the 75g as well!? And what grind you'd use on a Comandante for this single pour!? Best regards

Ah it’s just cause the ice is colder and there’s no need to use anymore ice for the protection I tried more and realized it just came out thin. You can use two cubes like 20g and it’s okay too. As for grind size, around 16-18 is best

I thought of starting cold before, however i thought the ice melting meant a too fast water addition. Therefore I just put my glass v60 on the freezer and it worked way better. Have you ever tried this one?

Hey! No i haven't found a need to freeze the glass. I always worry that the hot water will crack the frozen glass haha. I don't mind it when the ice melts too quickly, you can see my ice cube isn't huge, but it does the job just right for me!

@@TALESCOFFEE Yesterday a tried both methods side by side, and without the ice seems to have a hint more sweetness, however I think it came from a better stir and not the ice volume

Hi vincent, i was wondering if there was a different setup for darker roasts as with the same technique i get a nice dome with light roasts but a funnel shape with dark roast. Probably has to do with sinking speed. Good vid as always!

Hey! If you're getting a funnel your water is draining down too quickly. Either grind finer or pour slower. The issue with dark roasts is generally the rate at which flavours extract or the water sinks. It's because the beans are gassier which equates to a faster flow rate. Either slow it down or use a water temperature if the grind size is already ultra fine. You need to be like EXTREMELY slow on the pours

Hey Vincent, i am planning on Buying a better grinder. Do you think I should get a espresso or pour over burr? I plan on doing majority of pour over and the pour over burrs seems to have better grind distribution, however they are quite slow for espresso grind size. I am curious to know your recommendations.

I tried you cold bloom and the result is great thank for your experiment. Can I asked you something, have you try cold water mixed w/ coffee (like making coldbrew cof) then transfer to dripper and start drip?

How about actually freezing the coffee grounds? I'm thinking about thermally stressing the grounds as much as possible so they break up and release more CO2 but also solubles.

I do freeze the grounds! Not sure if I mentioned in this video or a different one. But freezing the grounds has produced the best results for me. The reason I don’t do it much is because I’ve broken a freezer in my shop from opening and closing it too much 🫠 。 Generally it protects the beans from the initial impact allowing more sweetness to come out I think!

This is pretty interesting and I am going to try this out. I noticed that you have had uneven beds on both and I haven't had any uneven beds, but I use a post stir swirl that happens after the liquid level has drained about an inch (2.5cm). The swirl will help produce an even coffee bed for a better extraction.

For the uneven bed are you talking about my dome?

@@TALESCOFFEE Yes, I was referring to the dome with the ice bloom. A gentle swirl after the last last addition of water has dropped about 2 or 3cm, has helped me with a flatter bed and cleaner sides. I am not as experienced as you are, and I am wondering if the bed shape improves the overall cup quality. I have heard that a flatter bed is better, but I would like the opinion from an expert.

My second try was definitely better with a smaller ice cube, but the normal single pour is still my favorite.

The previous one was a game changer but i noticed a slightly lack of body but sweeter Than normal v60, now i tried this one AND was 😮, i got no bitter coffee with well body but Is less sweet than than cold bloom.

Yeah the cold bloom is less sweet but much more complexity.

If cold temperature protects the coffee, what if you freeze/refrigerate the beans for a brief time before brewing?

I ve tried this method finally 🤣🤣🤣🤣 sweetness is so highlighted, than body is lesser 😄 still very good coffee using this method than cold water bloom honestly Anyway, eric: there's something about single pour coffee, since i'm single and poor . . . Whatttt 😅😅 Thank youuuuu

Would you recommend this technique with light roasts? Or go with the no bloom hot water method and reserve this cold bloom v2.0 technique with medium to dark roasts?

Probably medium to darker roasts. For lighter ones it feels really light
