Yummy Tandoori Chicken
Preparation Time: 15 minutes +1-2 hours.
Cooking Time: 50-55 minutes.
Serving: 4-5 people.
Ingredients:
1. Chicken leg pieces 5 pcs (1.5 kg approx.).
For the 1st marination
2. Red chili powder 1 Tbsp.
3. Salt 1 tsp
4. Ginger paste 1 Tbsp
5. Lemon juice 1.5 Tbsp
For the 2nd marination:
6. Medium-sized onion 1 and ½ chunk pieces.
7. Ginger paste 1Tbsp
8. Garlic grated 1.5 Tbsp.
9. Coriander powder 1 Tbsp.
10. Cumin powder ½ Tbsp
11. Black pepper powder 1 tsp
12. *Shahi garam masala 1 tsp.
13. Garam masala ½ tsp.
14. Yogurt/sour cream 4 Tbsp.
15. Kasuri methi (dried fenugreek leaves) 2 Tbsp
16. Fried onion (optional) ¼ cup.
17. Oil 2 Tbsp.
For the sauce:
18. The leftover marinade 1 cup (approx.).
19. Hot chili sauce 2 Tbsp.
20. Oil 3-4 Tbsp.
21. Salt if needed.
Procedure:
22. Slit the chicken pieces on both sides. Wash and pat dry with a paper towel. Add all the ingredients for the 1st marination and mix well. Rest for 30 min.
23. In a blender jar, take all the ingredients of the 2nd marination. Blend them to make a smooth paste. Add the oil before or after blending. It doesn’t matter.
24. After 30 min mix the blended spice to the chicken. Mix by hand to coat properly. Set it for 1-2 hours.
25. Heat a skillet /grill pan on high heat. Add 2 tsp oil. Place the chicken pieces.
26. Cook on the same heat until charred. It may take 5-6 minutes. This charred marinade will give a nice smoky flavor to the chicken.
27. Then flip the pieces. Add more oil. If you have mustard oil add it.
28. Reduce the heat to medium-low. Cover and cook for 20 minutes (approx.).
29. Then flip the pieces and add 1-2 tsp oil. Cover and cook for another 20 min.
30. After that brush oil on top of the pieces every 3-4 min. Do not cover it. Change sides occasionally.
31. Nearly 55 min later, check the pieces. They cooked nicely. Turn off the heat. Cover with aluminum foil. Give a standing time of 5 minutes. *If you want to bake it. Preheat your oven to 425 F. Place the pieces in a baking tray. Bake for 40-45 minutes. Then brush oil on top. Reduce the heat to 400 F. Bake until cooked perfectly (approx. 15-20 minutes). Then broil for 2-4 minutes. It will be done nicely.
OUR YUMMY TANDOORI CHICKEN IS READY. SERVE WITH MIND-BLOWING SAUCE AND CUCUMBER SALAD. IT GOES VERY WELL WITH PARATHA, NAAN, AND PLAIN PULAO.
*I always add a small amount of mace and nutmeg to our garam masala to make it shahi
garam masala.
