Holy sheet! Three simple dinners for under $2 a plate!
Mongolian Beef with Green Beans & Squash
Ingredients
For the beef:
• 1 pound skirt steak, sliced into ¼-inch strips
• ¼ cup cornstarch
• ¼ teaspoon kosher salt
• ¼ teaspoon black pepper
For the sauce:
• 6 cloves garlic, minced
• 1-inch piece ginger, peeled and minced
• ⅓ cup soy sauce, low sodium
• 2 tablespoons canola oil
• 1 tablespoon granulated sugar
• 1 teaspoon chili flakes
• 1 pound green beans, trimmed and halved
• 1 pound butternut squash, peeled and cut in ½-inch cubes
• 1 tablespoon canola oil
• ½ teaspoon kosher salt
• ¼ teaspoon black pepper
• 1 tablespoon sesame seeds
Steps
1. Preheat the oven to 425 degrees.
2. On a cutting board, cut the skirt steak perpendicular in thin strips cutting against the fibers. Next, in a large bowl, toss the sliced beef with cornstarch, salt, and pepper. Make sure it is well coated. Set aside.
3. In a small bowl, whisk together garlic, ginger, soy sauce, oil, sugar, and chili flakes. Set aside.
4. On a large rimmed sheet tray, spread the green beans and butternut squash. Drizzle with oil, salt, and pepper. Add the coated beef on top, trying to keep everything in a single layer. Pour sauce over beef and vegetables.
5. Place in the oven. Roast for 30 to 35 minutes, until squash is tender. Remove from oven.
6. Sprinkle with sesame seeds. Serve, and enjoy.
Salmon Asparagus and Sweet Potato
Ingredients
For the salmon:
• 2 to 6 ounces salmon fillets, skin on
• 2 cups asparagus, trimmed and cut into 10-inch pieces
• 1 large sweet potato, peeled and cut into ½-inch cubes
For the sauce:
• 5 tablespoons butter, unsalted
• 3 teaspoons mustard
• 1 tablespoon maple syrup
• 1 teaspoon kosher salt
• ½ teaspoon black pepper
• ½ teaspoon garlic powder
Steps
1. Preheat oven to 425 degrees.
2. On a large rimmed sheet tray, add asparagus and sweet potato cubes, then in the middle, add the salmon fillets.
3. In a small bowl, whisk all ingredients for sauce together. Drizzle over entire tray. Toss to coat all vegetables and salmon.
4. Place in oven and roast for 20 to 25 minutes, until sweet potato is tender. Serve immediately.
Asian Cashew Tofu with Broccoli & Red Bell Pepper
Ingredients
For the tofu:
• 16 ounces tofu, extra firm
• 2 ¼ cups vegetable stock
• 2 tablespoons soy sauce
• 1 cup medium grain Calrose rice
• 2 cups broccoli florets, cut into small size pieces
• 1 red bell pepper, cut into ¼ in strips
For the sauce:
• 2 tablespoons tomato paste
• 1 tablespoon balsamic vinegar
• 1 teaspoon toasted sesame oil
• 2 garlic cloves, minced
• 2 teaspoons granulated sugar
• 1 teaspoon fresh ginger
• 1 teaspoon cornstarch
• 1 teaspoon chili flakes
• 2 tablespoons soy sauce
For the toppings:
• 3 scallions, thinly sliced
• ⅓ cup cashews, toasted and chopped
Steps
1. Preheat oven to 400 degrees.
2. Remove tofu from packaging. Drain liquid. Slice in half longways.
3. Line a small sheet tray with paper towel. Place tofu on paper towel. Top with something heavy or apply pressure. You want to release as much liquid as possible from tofu. Let sit for 30 minutes, or longer if desired. Remove to cutting board, cut into 1-inch cubes.
4. On a large rimmed sheet tray, pour vegetable stock and stir in rice. Add red bell pepper and broccoli followed by the tofu cubes. Cover with foil. When placing in the oven, keep tray leveled so not to spill the liquid. Cook for 30 to 35 minutes.
5. In a bowl, whisk all ingredients for the sauce, until sugar is dissolved.
6. Remove tofu and vegetables from the oven. Pour the sauce over then garnish with scallions and cashews. Stir until combined.
7. Fluff with a fork and serve. Enjoy!

Struggle tip: tomato paste in a can is much cheaper. AND it freezes well. So once I'm done with what I need of tomato paste, I put it in a zip lock bag and flatten it. Why flatten it? Because then I can break off chunks of it later, depending on how much I need. Remove excess air and throw it in the freezer.

That's a great idea! Someone had to say it, I was getting sick of every youtuber plugging tomato paste in a tube when it's 4 times as expensive. I just make a big recipe instead, and reduce the amount of other canned tomato product that I'd be using in the recipe.

@@lilmonster90210 tomato paste in a tube in the uk is about 50p,,, about 65 cents. It never occurred to me that it could be expensive in other countries as it is just there, on the shelves, in the supermarket. We were in the Fuertevenura over Christmas and it doesn't come in tubes there, just little cans.

I recently made the Mongolian Beef sheet tray, and it was really good! I recommend using the sauce to coat the beef thoroughly instead of just drizzling it all over.

We just made the salmon sheet. The wife loved the veggies and I liked the sauce. It doesn't overpower anything on the tray but, just brings it all up a a few notches together. Its a perfectly balanced meal. A side of wild rice went well with it.

All these people complaining about butter packets not being a real thing: where I live (Austria) you get them at every restaurant/hotel/fast food place where they serve breakfast and you usually get more than you need so you could take the unused ones home :) and if you store them in the fridge instead of a drawer (which I‘m sure Frankie does too) the butter stays fresh for a pretty long time :)

Whenever I tell my hubby that I'm making the Struggle Meals Salmon with Asparagus and Sweet Potato he gets SO STOKED!! It has become one of his favorite meals. So extremely easy to make and so delicious!

Salmon one, I do broccoli and asparagus. And I just use butter (that I pay for because free butter packets aren't a thing you can really get) and lemon. Ideally, I serve it with pasta or rice. Egg noodles are a great option.

The $2 is based on the assumption that you split it into 4 servings, so each one is only half a piece of salmon. The plate he showed was actually $4...

That's EXACTLY what I was coming here to say! The two salmon steaks were $5.74. He made the plat with one steak and said the plate was $1.99?!?! The salmon alone would be $2.87! Then add the veg and you're well over $3!

Someone else shared that they freeze the remainder of the can of tomato paste to use later. I take ginger and grind it up in a food processor with some water. I pour it in a zip lock bag and flatten it out (or you could put it in ice cube trays). I break off pieces when I want to add some ground up fresh / frozen ginger in something I'm cooking.

The problem with many "budget" cooking videos is while yeah a small amount of a spice used in a particular recipe is inexpensive and fits into a budget, if you don't already have a good selection of spices and other flavor enhancers, you won't be buying many if you are truly on a tight budget. at $5-10 for many of these, just getting a starting selection can be an investment for people genuinely "struggling". I like the condiment drawer, but some of these other things will be out of reach for people really needing to stretch their dollar.

The packet drawer always seems misleading to me. Especially when the majority of a recipe is based on packet drawer items. If I'm having to make struggle meals i obviously don't have the money to go out to eat enough to establish a packet drawer like that.

You can walk in to like a taco bell and order a single item like an 89cent burrito and swing by the sauce packet section which also has sugar because they sell coffee as well, the maple sryup you can grab from mc donalds after buying a dollar breakfast item and so on so forth....

Some of the seasoning from the packet drawer are very cheap in bulk. Such as chili flakes and sugar. I can get sugar 20 cents a lb where I live, if I buy in bulk.

Same with ketchup and any bbq sauce. But thankfully those things aren't actually that expensive to begin with to buy the normal way, and most of them keep awhile. I'm allergic to corn so I have to do this anyway.

As someone who eats tofu a lot, dont cook the tofu like that! U dont want to steam tofu bc it doesn't have a good texture (its mushy that way) pan fry it but first marinade it!! In literally anything u want but marinade it!

How does one establish a packet drawer as a poor person when it involves going out to eat a lot? It seems like, in the real world, the type of person relying solely on struggle meals would in fact not have a packet drawer.

Walk into restaurant. Go to drink station, which also has the caddy of condiment packets. Take packets. Walk out of restaurant. No money required. *This only works in fast food and "fast casual" type of restaurants that have a fountain drink machine and condiment area.

I guess it's a matter of asking for extra... I usually bring 5+ packets of ketchup at a time when I go to fast food places (which I don't do very often).

Everyone eats out every once in a while allowing the opportunity to grab a few packets, there’s packets in office break rooms, free samples. I rarely eat fast foot but have a variety of packets for camping from just eating a few times from fast food or Chinese take out.

You can get free sugar at places the serve coffee.....everyone eats out at some point....buy a single item and load up on sauces, salt, sugar, when you go through a drive thru order the cheapest item they have and when they ask do you want sauce smile and say yes please as many as you can give me of each lol ranch, bbq sauce, ketchup, etc...

if you like that method of cooking the rice, check out "sheet pan suppers - meatless" by raquel pelzel; she has many sheet pan recipes where you cook the grains in the oven with the rest of the meal.

Frankie - you are inspirational, entertaining and have a way of making complicated tastes simple. One question - would you put all of this on a sheet tray without oiling the pan? I would like to use your videos to teach my sons to cook and I find that each time I think - oooh, boy - that will be a nightmare to clean up. ???

It's supposed to be $2 per plate (serving), so the two portions isn't really an issue. But still... yeah, that would be more like a 1-2 inch salmon cube per plate.

advice, add the ginger and garlic to the stock in the last one, otherwise the raw garlic is a bit too strong and makes you stink for two days. :D

I made the tofu dish, and it was delightful, but the rice stuck to the sheet and I had to work pretty hard to lift it. It didn't burn, it was just a pain to scrape off. Should I have used cooking spray first?

I’d like to know where he found salmon for $1.99 a piece. And you can buy tomato paste in a can you just wrap the leftovers in wax paper and freeze. Same thing with canned chipotle peppers

He didn't show this, but if anyone here doesn't know, you have to snap off the tough ends of the asparagus. Easier to do that before you start chopping it up.

if you use tomato paste in a can, you can buy can covers. They're meant for dog food but work for all standard cans.

It'll turn black and disgusting wherever it's been exposed to air, though - better to put it in a small Ziploc bag, squeeze the air out, seal it, then flatten the bag & freeze. Break off what you need when you need it: it'll keep in the freezer for months.

i was a little disappointed that there were no vegetarian options in several recent episodes. however, sheet tray recipes are my favorite. i am no longer disappointed (though i'll have to sub out those peppers for something my dodgy digestive system won't object to. :) carrots, probably.) thanks, frankie! :)

You can buy tomato paste in a tube but it cost more. You can buy in a can just scoop our and freeze the rest in individual bags or one bag however you want to do it. You can also if really trying to make budget meals create another meal that uses tomato paste and Thousand Island dressing uses tomato paste so it has other uses you just have to research so you do not waste.

I dont care what yall say but these ARE NOT "struggle" meals at all! Id see if we got everything from dollar tree or reused left overs or something like that but you still have to have money to buy fresh steak and salmon in general as well as other stuff he been cooking.

Love the show but WHERE DID YOU GET THAT SPATULA YOU USED TO SERVE THE TOFU DISH?!?!? I had one like that for YEARS and then someone accidentally threw it away. Despite all my thrift store hunting I still haven't found a replacement, and asking around at kitchen supply stores has gotten me nowhere because I don't know the technical use for that tool and apparently no one sees the potential usefulness of a long handled spatula. I would be undyingly grateful for any information you could share on that thing!

Skirt steak is insanely expensive in NYC. Just sayin'. That being said, these recipes are still insanely creative.

@@MrsRen no, because I've done similar things in the past. If you realize that "hey I can't use steak so this isnt going to taste as good as with steak" then you're fine. Also, if you use ground beef for this recipe, maybe make it in a pan instead of in the oven.

I agree. You have to learn what is more affordable where you live. In fact I was looking for flank steak in my area and the butcher laughed and said they do not carry it because folks consider it a cheap cut of meat! I was shocked! CHEAP? Have we become so bourgeois? But like you said salmon is not cheap here at all unless you catch it on sale. Tilapia is a more affordable fish.
