Eno, soda, fruit salt give me stomach cramps. To avoid them, I soak a tsp of methi seeds along with the dal. I add soaked poha at the dal grinding stage. I keep the batter for fermentation for about 3 hrs. The rest of the process is the same as yours. If lemons are not available, I use 2-3 tbsp of sour curd at the grinding stage. It helps in fermentation too.
