My favourite smoked fish ,where is my fresh pepper and kenkey my mouth is watering.I have been making mine in UK with some very fat mackerel freshly bought from London’s fish market. Smoking is slow using a low fire so that they don’t burn rather than smoke. Smoking was a means of preserving fish before our ancestors laid their eyes on refrigerators. Chile Is the king of red snapper we used to get them at Jamestown beach in the evenings when the boats came in when I was a kid.

It's so that it can be stored since there was is no refrigerator or cold storage from our ancestors. But today there is semi soft smoked fish. Newer smoke grills are available for sale here in the USA. Very good for Africa

Taty! Another amazing piece of greatness! Something you did different here, that you should keep doing is the introduction with you walking up to camera. Then speaking to what/who you are about to profile and introducing the person to be profiled, who in this case is Madam Tiwah. Just very well done. It is also professional, but you still found a way to infuse it with your style. Just brilliance as usual. Keep being you, that is what makes your videos so authentic and original. Some KZfaqrs try too hard to emulate their peers in the Western world, and in the long run it does not work out for the African/Ghanaian setting. With your efforts, watch some non-Ghanaians begin to pick up Twi. And such an accomplishment is huge and commendable. We spend efforts learning the language of others, why not others learn to speak Twi? The mackerel looks super appetizing. Few years ago, I began applying smoked mackerel to my salad while visiting London and it was glorious. I need to find "good" smoked mackerel in Houston, Texas. Again in conclusion, your videos/content are highly valued by your fans and keep them coming. We are hooked!

It’s Chile which is the huge snapper fish. Grouper is a different fish and in Ga it’s called Shoie.
