Ten Minute Tacos! Chicken & Black Bean!
This mix makes 3x than you will need to use, keep the extra in an airtight container.
Taco Seasoning:
1 Tbsp. chili powder
2 tsp ground cumin
1/2 tsp paprika
1/2 tsp smoked paprika
1 tsp ground black pepper
3/4 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1 package of Sazon.
Optional: Annatto for a peppery taste and natural color.
Hot seeds and cayenne pepper for the heat.
For the rest of the tacos:
1 Chicken breast, cubed.
15 Oz Can of Black Beans, strained and rinsed.
½ Onion, diced.
2 Cloves of garlic, minced.
½ Tomato and chicken bullion cube, you can use chicken just follow the directions.
These cubes make 2 cups and I only need one so I cut it in half.
1 Cup of warm water.
2 Tbsp. cold water.
1 tsp of cornstarch.
S&P, hot seeds to taste.
1 Tbsp. EVOO.
High heat, add chicken, do not stir, you want color.
When almost cooked through, add onions, Stir.
When onions are translucent add garlic and 3 Tbsp. of seasoning, stir about a minute, this is important because it brings out the spice flavors. If by chance it starts to burn, quickly add the one cup of broth.
Add beans.
Bring to a simmer while stirring.
Add the cornstarch slurry, stir.
Bring to a simmer.
