A quick guide for Extension offices.
Many Extension offices have staff or volunteers that will perform free testing of dial gauge pressure canners using the Presto Master Gauge Testing Unit. This video is for teaching the testing process. It is a good first introduction or refresher for anyone that will need to use the testing apparatus.
This video was made for use with the University of California Master Food Preserver Program, but the testing process is the same as that recommended by the National Center for Home Food Preservation and should be applicable in any state.
Master gauges should be calibrated each year by returning them to the manufacturer for free servicing.
This video was produced by the UC Cooperative Extension office in Inyo and Mono Counties.

Can I test them with against my air compressor guage?

I don't think we have anywhere in Canada to take our to test them. Any ideas. The reason I am asking is I have been pressure canning at 15 psi, at 5000' I believe it's only 13 psi, but I am only at 1300' so things like corn seem to caramelize because of over pressure. I wish I could have a way to test mine so I could use the gage instead.

Thanks for sharing. I just received my new pressure canner. It says to have dial gauge tested each year before canning. Does that also mean a brand new one before initial use??????? THANKS

My altitude is 1,145 ft. NCHFP says to can at 11lb psi. I have a presto three piece weight. Do I use the 10 or 15 lb weight as the 10 jiggles at 11 psi?
