Dear Pam, my husband and I just finished watching your test results for the Nesco smart canner. I am beyond excited to get the results!! I have 2 of these canners and have been using them for 10 months. I became hesitant to continue using them when other people on U Tube condemned the use of all electric canners. However, you being the Scientist your are, stepped up and did the testing that the USDA would not. Spending your own money, purchasing the very expensive "GADGET" and all the time and expense of the food, plus the expense of purchasing all 3 of the canners that you tested!! You truly are the person you claim to be. That being someone who honestly cares about the safety and procedures we use for food preservation!!! Thank you, and many "Blessings" to you and Jim

Hey, @Brenda Leers - I know Pam and Jim have hundreds of comments to read through, so I figured I’d ask someone like you this question. When Pam said the beans siphoned, and she was going to let the jars have a natural cool down, does that mean they need to be left in the canner longer? Or that the hour was too long? I’m still learning & just received my nesco, today!!! 😇🤪😇

@@lmullens75 I'm not Brenda but feel I can answer this. When we use a stovetop canner, we let the canner come completely down to zero pressure before opening. This lets the cooling process get to a point that extreme temperature changes do not create siphoning (cool to watch but not what we want). Letting the Nesco canner release all pressure on its own (meaning the red valve/pin has dropped) lets the canner open without expressing pressure and helps to eliminate/reduce possible siphoning. Many of us prop the lid open (with a wooden spoon, etc) for 5-10 minutes to further allow for a more natural return to temperature and external pressure. When using a stovetop canner, many recommend leaving the lid ajar for 5-10 minutes for the same reason. Happy canning!!!!!!

I like to follow the rules, and by-george, if the instructions say to wait an hour, I'm probably going to pop it open at exactly 61 minutes. I will be watching after all the pressure is released, and prop the lid with a spoon as you suggested. 😃 My mom is so excited for me. She knows we only have a little induction cooktop to work with, so I think us having an option means she doesn't have to get out her big Presto for me to use. Ha!

Hands Down you are the safest canner on KZfaq. And about that reusing lid video ,I am very appreciative knowing in an emergency there is another option. What the Naysayers don't realize is in other parts of the world reusing Lids is the only option and the way this country is going we will not be far behind.

Here in Canada either. Everything is getting so poorly made. So far, Ball, Kerr, Golden Harvest & Bernardin seem to be maintaining their standards. I saw a video today where a lady had an entire batch of peaches - 7 quarts I think - ruined because the lids literally buckled so badly she didn’t trust the one that did appear to have sealed. Wasn’t my experience and I was ready to cry on her behalf. I felt her disappointment. I shouldn’t admit this but I’ve reused old lids multiple times over the last 51 years.

@@amieinnovascotia8490 Gosh, I didn't think the reason why 5 out of 10 lids on my canned pears didn't work was because the lids aren't good. I thought it was my canning expertise (of course, I'd blame myself). But I didn't keep the ones whose lids didn't work. I was afraid, since they sat overnight.

@@susantobelknight : it wasn’t necessary to throw them out if they had been processed at the correct time and pressure and the jars hadn’t been opened at that point, and they sat out only overnight. Remember the air inside that jar has been superheated to kill all bacteria. Even though They were not securely sealed there would have been little if any transfer of air for that short period of time. I wouldn’t advise leaving them on the counter for more than overnight though. Next time, as soon as you feel that the jars might not seal, put them in the fridge and if they are out overnight, refrigerate them or remove the contents to a suitable container for the freezer. I expect that is not the recommended way to handle unsealed jars officially. I find that I have very few seal failures if I wash the lids then put them in a pan and bring them up to a boil and then turn the heat down or off and keep the flats in the very hot water. Also, I always leave an extra half inch of headspace.

@@susantobelknight: Susan, I just re-read your comment. Pears are a high acid food. I’ve been bottling fruit preserves (spices pears specifically) and all I’ve ever done is make the syrup, get it to a boil, dump in the pears and bring them to a boil. Don’t let them boil. A minute or so is OK. Then I bottle in hot, sterilized jars using sterilized utensils, slap hot lids on the jars. Job done. Years ago (50 or more), I’d have added lemon juice to the syrup. Now I use Fruit Fresh or food grade citric acid. Even if a jar doesn’t pull a seal (yeah I’m guilty of using flats multiple times) as it cools, with all that acid and sugar even if it sat out longer than overnight, as long as you didn’t remove the ring and open the jar it would be good. You won’t get sick. As Martha once said about ketchup, it will lose its appeal long before it becomes dangerous to eat. Same with any fruit. If they are bad when you open the jar, you will be in no doubt. Flush them.

At my age 81, I felt that I had to give up canning because I couldn't manage my 23qt Presto. I recently bought a Nesco and I love it and I am canning again. I am going to buy a 2nd Nesco so I can can larger batches. Thank you for doing these tests.

Dear Pam... I rewatch your videos all time. As I am finally ready to can in the Nesco, I see the Nesco instructions say to use wide mouth jars only. Why is that? I love my Nesco canner. I switched from the All American canner because I was in a car accident and could no longer lift the All American. It is smaller batches but I was happy to be able to keep canning.

Also, I always do 90 minutes for quarts and 75 minutes for pints. I also found if I went with the lower time sometimes it would fail. So I went back to the good old days and times and haven’t failed since.

After seeing this video, I just ordered the same unit. My All-American is over 50 years old. At my age, it’s too heavy to deal with and I have the devil of a time keeping the pressure even remotely constant. The problem is the burners on the stove are too powerful.

Hi Pam, I have been looking at this Nesco and the Presto for a while now. I was leaning towards the Presto until I watched your reviews on them and now have decided to go with the Nesco. Since I've never done any canning before I wanted something simple to use but safe. So again, thanks for taking the time and effort to make these videos.

I bought this Nesco canner. I love it! Have used it at least twice a week for several months. I had a couple of moments of failure. It’s where I learned a few things about the nesco and my ability. But thanks to you Pam , you walked me through it. I’ve done meat to vegetables and fruit. And your crust recipe is amazing. Thank You for you and your husband do for all you do for us who are learning new techniques . God Bless

THANK YOU PAM! It is strange and confusing for a newcomer to pressure canning to carefully research the "official" instructions from a few sources, only to find dozens of lifetime private canners ( and personal friends) using different timing. The 75-90 minute rule that you established using the Nesco Digital is precisely what the private canners subscribe......Pam, your academic research into this subject is so greatly appreciated. I feel far more confident now to forge onward.

Whoop! I have had and used the Nesco for over a year and have had no problems with it. Having said that, the level of ridiculous joy I have after watching your testing of the Nesco is almost embarrassing, simply because of all the negative comments I’ve read the past year or so on using a digital canner. Thank you so very much for all of your due diligence! I just bought another one before the price goes up!

$113 on Amazon on 27 November for Carey. Mine arrived last night. Nesco (same product, different logo) was $200. Now the Nesco is out of stock.

Bravo! Thank you for your hard work.👍 In one of your MicroMoments consider addressing the difference in canning at elevation and sea-level? Also address what would happen to the food at sea-level if you increase the pressure. I think that might make a good topic some folks would be interested in.

I bought a Nesco a couple weeks ago when it went on sale and it arrived TODAY! My reason for getting a digital canner over a standard pressure canner is the heat it puts out. It is legit 98 degrees today. My ac is struggling to keep my house under 80 and it's new and more than what my home really needed but it is what it is. No way can I cann if my home is already 78-81 degrees 😩. I am new. I started with a steam canner and have made jams and canned some fruit and just made applesauce this week. I am excited to have some control over our food. But I am learning safe practices and following instructions carefully. Thank you for this video!!

I purchased the Nesco Smart Canner a year ago and it has been a workhorse. I have a huge garden and can extensively. This canner has freed up my time so I no longer need to sit and stare at the dial as I did with my Presco canner. This is how technology should be helping us with our workloads. As for saving time in the kitchen, I compare this to the difference between using a microwave or cooking on a wood-burning stove. I appreciate you testing it because your results have given me peace of mind.

After watching the video again, I noticed you added two quarts of warm water to the canner. On page 10 of my instructional manual, it said to add one quart. I called customer service and they have changed the instructions from one to two quarts. I'm just letting people know in case they have an older manual.

My canner has been a workhorse. I am constantly canning something. Right now, it is the winter greens from the winter garden and before that it was dried beans and before that soup. I have used the water bath feature but it requires you to listen for the beeps so you can pull the jars out immediately before they cook too long. The first time I water bathed I walked away and forgot. My pickles were mush. @GrannyLovesSquare

I believe it is the Nesco smart canner that my brother bought me a couple of years back. It's been sitting on the shelf because I m leary of pressure canners. Now I'm going to get that bad boy out and try canning meat. Thank you Pam. I’ve had 2 Carey’s for several years and love them. Figured long ago if they weren’t safe it would have been well know due to the sheer number that were sold. I always processed for FDA recommended times and for any meat product 75/90 times. Glad to see my gadget lady verifying the smart canner. Again thank you it is a great alternative for glass too stoves and small batch canner like me

I am so confused about the difference in canning times. Is the pressure canning time for my Nesco different than normal pressure canning per USDA? USDA says 75 minutes for raw chicken quarts with bone in ... what "standard" times is she talking about? FDA? I can't find FDA recommendations online. I already canned 7 quarts of raw chicken with bones in my Nesco for 75 minutes and now I don't know if they're safe. Can you explain this to me? Thanks!

as usual, thanks for a great video. One thing for us in the US to note, Pam is using celsius not farenheight as that is what her logger uses....initally i was confused by 115degree's being the 'kill zone' however that = 240F .... just an FYI

Thank you for all your hard work and your dedication to testing and data collection. I am a very proud owner and avid user of the Nesco 9.5 qt Smart Canner. I absolutely love using this canner. My husband and I are retired now, so it is perfect for the two of us. Please know that so many of us appreciate everything you've done to encourage and to educate us!

I've been waiting for this video because I think electric digital canners fill a niche of need for the elderly, the disable,d and etc. If they work, are safe, and reliable then they will be of benefit to many people. So, Ty again for all the effort you have put into testing these canners.

They also really fill a niche-need for smaller families, couples, singles, and folks with small gardens who don't get a lot of produce all at once. I've been a stocker, but it's so much easier for me now with this smaller canner.

Being an pressure canner from way back, I wanted to try an electric pressure canner but didn't feel confident buying one until I saw your videos. Extremely happy with the Nesco 9.5's performance! Thank you for another wonderful video. Unfortunately it doesn't seem to be on sale in the UK,. If you chat to the designer again you could mention that there's a big market being ignored over here. Having said that, I did contact Instant Brands UK and they confirmed to me that they were about to launch a UK version similar to the IP Max designed for canning so am eagerly awaiting that.

Pam, thank you very much for doing such a detailed job concerning the Nesco canner. I had been using mine for the past few months (I have the exact same model as yours) and was really hoping it was preforming safely, doing what it needed to do, concerning pressure canning. It passed the tests. Yay! It was interesting to know you were able to speak to the inventor of the machine. Would you be able to interview him at some time so that he could tell his story? Thanks again for all your work with the canners. PS: you and your sister are just precious to witness.

Hello! : D It's 9-21-23 and I"ve just bought this pressure canner. The first thing ( the Only thing, so far) I did was quarts of your hamburger and onions in broth recipe from another video. I followed the canner directions and everything SEEMS to be ok. It looks nice : D If we don't kick the bucket from food poisoning this winter it'll be a win! : D Thanks for all the tips and research. Your data thingy is VERY NIFTY!

Wonderful video! I have the All American and I think I'll keep it! For one, I can still use it off grid. You can't with an electric canner unless you have some type of backup electrical system. UPDATE: Im just not willing to buy another product when I have something that works for me. No disrespect intended for those who use electric devices.

Thank you!! The information about the siphoning is helpful, I will leave my jars in a bit longer than the 1 hour. How is the texture of the beans after that long in the kill zone? I’m really glad you tested the sauce at the 75/90 minutes. I’ve only ever read/heard that a thing with meat or beans are processed at those time. I absolutely love my Nesco canner! I am so glad I ignored all the naysayers. It’s perfect for small batch canning and so easy to use. A tip I’ve heard is to line up the jars with the hinge on the lid while it is open. When the lid is turned into the locked position, the vent is then located between the jars. This helps with venting.

I follow the same steps for natural release that I would follow with a stovetop canner to avoid siphoning and/or broken jars. Most times, my Nesco has fully released after an hour ... on those rare occasions where it has not, I wait until the pin drops. I take it a step farther and prop the lid open with a wooden spoon or something for 5 minutes before removing jars.

The NESCO website recommends using wide mouth jars. My first batch of chili failed. I rejared and followed the directions with wide mouth great success.

I think it is wonderful that you were able to talk to the inventor. I wish more companies would contact you and invest in your help! Glad you had fun with your sister. My sister gave me a counted cross stitch that says " A Sister Is A Forever Friend"! Aren't we blessed!

I can’t thank you enough for your dedication and exacting assessments for the benefit of all. You are truely invaluable. You are helping so many preserve food in the safest possible way. “The times they are a changing” and preparedness is the key. With the bad Aussie bushfires, to have a cellar away from the main structure with substantial reserves would have saved many much grief. I am thinking sink a large sealed concrete water tank, deep in the side of a hill, in the ground, could keep sufficient to survive for a year plus, allowing you to rebuild.

Miss Pam, Used my Nestco canner today for the first time. Love it!! I canned 4 quarts of beef stew. Everything went smoothly. Very easy to use especially after watching your video. Thank you for all you two do! I have learned so much from you.

THIS video made my day. Now I can try my new Nesco Canner. Thank you so much, this will be so helpful for me I have a request from my sister-in-law to can her some pint pinto beans. That will be my first try glad you said your beans stiffened when you released the canner as per directions I will leave till the total cools down too. Thanks again for all you do I can't seem to find the video on instructions to use the Nesco. If anyone knows which one please leave a comment. I have watched all the videos, but not recently like this week LOL My memory is short term LOL

I love all of your videos, Iv always wanted to can foods but Iv been afraid of canning with stove top canners ever since I was a teen when my mom's canner exploded, in fact she stopped pressure canning after that.. You're the reason I chose to buy the elect-Carey Canner just recently, after 40 years, I'm going to give it a try😁.. Thank you

Thank you for all of the detailed information that you have given us as individuals. I’m not a scientist there’s no way I could’ve worked through this. You brought the information to a level a lay person, like me, can understand. I’m not a stupid person, and when you went through the information explained it to me, I realize what a wonderful teacher you were and still are. You have to understand the information to be able to put it in terms that your students can follow and understand. I have the Nesco canner now I am not uncertain about using it. Thank you Pam and Jim The elevation where I live is 1001 foot. One foot makes a lot of difference. 😊 And I have always heard not to give a child under 12 months honey. I followed the rule, but now I also understand the reasoning. (Sometimes this iPad changes some words. Hope it comes clear). and understandable.)

Thank you so much for your testing of these canners!! I just ordered my Nesco from Farm and Fleet. They just got some in and I finally bit the bullet and ordered. I had to think long and hard since I already have 3- 23qt pressure canners, but I just don't always have the time to sit and watch that pressure dial for 75 minutes. I only cook for two so I will make bigger batches, just like I cooked when our 6 kids were growing up, and I will can it. This is going to be amazing!! Thank you for protecting us from botulism. I missed getting botulism by one day many years ago. I ate a Patty melt at a restaurant in Northwoods Mall in Peoria, IL. The next day 28 people got botulism from the sautéed onions served mostly on the patty melt. No one died due to a doctor who knew the signs immediately and took action. Now for a nap.

Another EXCELLENT and informative video! How exciting that you were able to speak with the inventor! I'm sure that was a little bit thrilling! I have heard nothing but good things about that canner, and even in other videos of people using the Nesco, I could see how simplistic it is to use. I just purchased a 23 quart stove top canner, but my next canner might be the Nesco! 💯😊

You are a blessing to me as l have never canned lland don't want to try any rebel canning recipes or methods,you are my go to for survival tips and canning,l think you are awesome.Blessings to you and Jim.l am getting an elec canner to use now,l have a glass top stove like you do, but to get to my back deck to use a campstove,l have lots of steps to go down,and lm well into my seventies, l may swap over to a gas stove as l have a regular stove top pressure canner like you have also but can't use it on the glasstop.

Thank you for performing all the testing! Solid scientific work too. Also, I’m learning (from you) that precisely following the recipes and instructions is extremely important. I’m glad that you had an opportunity to talk to the inventor too! As a side note, the hum in the audio might be caused by a short in one of the cables you use for your video equipment. It may also be an intermittent problem too. I am usually stuck with getting a new cable (or a known good cable) and swapping it in/out until the bad cable is found. If the short is in any connector on your equipment (which is less likely) you might have to take it in for repair.

Thank you so much for testing these canners! I have owned and exclusively used one Carey and two Nesco Electric smart canners for almost 3 years. My stovetop canner lives on a shelf in the garage now. I love these smart canners! I have canned pretty close to 1000 jars of all kinds of food and have never had a problem. During that time I've only had one jar break due to user error LOL and two lives that didn't seal. Thanks again for doing this testing. You're pretty awesome!

I just got my Nesco and the book says to only use wide mouth jars. Was wondering if you have used regular mouth and had good success? Wide mouth are not readily available. Thank you for any help.
